Mutton Bone Marrow Curry

The bones with bits of meat clinging here and there are drenched in a spicy thick curry with plenty of bite in the texture.

Ingredientes

  • 12 medium pieces of mutton bones
  • 1 tbsp ginger paste
  • 1 tbsp shallot paste
  • 1/2 tbsp garlic paste
  • Spices - 2 sticks cinnamon, 2 star anise, 4 cloves and 2 bay leave
  • 2 tbsp plain chili powder - mix with some water for a thick paste
  • 2 tbsp yogurt
  • 3 sprigs curry leaves
  • 2 sprigs coriander leaves -shredded
  • 2 medium size potatoes - cut into medium size pieces
  • 4 tbsp oil
  • Salt for taste

Direcciones

  1. Pressure cooked the bones with enough water. Remove and keep aside.
  2. Heat oil and when heated, sauté spices.
  3. Add chili paste and continue to stir until oil splits.
  4. Add in bones, potatoes, curry leaves and salt.
  5. For more gravy, pour in the needed amount of water
  6. Stir and continue to cook.
  7. When potatoes are tender, gently stir in yogurt and coriander leaves.
  8. Once done, remove from heat.
