Receta MUTTON KORMA RECIPE
Mutton pieces are marinated in yogurt then slow cooked until tender.
There a tons of recipe for Korma. One of them uses ground almond, cashew or grated coconut like this and this . You can use chicken, beef or lamb for cooking the recipe. . .
This Mutton Korma uses pounded fried onion and to be marinated for at least an hour. The marination not only gives a tasty flavor but also help to tenderize the meat.
Another difference was, this Mutton Korma does not involve sauteing the spices in ghee as you normally do, The spices, yogurt and ghee are added together with mutton.
Pounded cinnamon, clove, peppercorn and cardamom are also used
MUTTON KORMA RECIPE
Serves : 5-6
3 big onion sliced and fried
1/4 tsp grated nutmeg
1 tsp kewra essence (I omit this)
MARINATE
500 g mutton pieces with bones cleaned
1 cup yogurt plain whisked
2 tsp chili powder
2 tablespoon meat curry powder
3 tablespoon ghee
1 tablespoon garlic paste
1 tablespoon ginger paste
2 green chili paste
salt to taste
GRIND
5 cloves
2 stick cinnamon
6 peppercorn
4 green cardamom
DIRECTIONS
Marinate cleaned mutton with spices for 1 hour.
Grind items to grind and keep aside.
In a pan, fry onion until golden brown. Grind into paste.
In a pan, cook mutton using high heat for 5 minutes, reduce heat and cook for 20 minutes.
Now add ground onion and items to grind. Cook for 2 minutes using high heat..
Add 3-4 cups of water and bring to a boil. Lower the heat and continue to cook for 30 minutes,
Add grated nutmeg and cook for 10 minutes.
Add 1 tsp kewra essence (I did not add), cook for another 5 minutes. Remove from heat.
