Receta My Clam Chowder

- Cook potatoes in fish stock or possibly salted water.
- Drain clams and add in juice to stock, reserving clams
- 3.Remove the potatoes and save liquid.
- Meanwhile, cook bacon in another pan to render its fat.( don't let it brown)
- Throw away most of the bacon fat, leaving 1 Tablespoons
- Add in butter to the pan and cook the onions till soft.
- Stir in shallots and cook 1 minute.
- 8.Stir in flour to make a blond roux.
- Let cold a little.
- Add in the stock, stirring constantly to avoid lumps.
- Stir in lowfat milk, salt and pepper and bring to a boil.
- Simmer 15 min, stirring occasionally.
- Add in the clams and the potatoes, simmer 15 min. Stir occasionally.
- Stir in cream and cayenne, bring to a boil.
- Serve at once.
- I like to serve my chowder inside individual sourdough breads.
