%20Better%20yet,%20we%20were%20able%20to%20pack%20a%20cooler%20with%20more%20of%20that%20ham%20and%20bacon,%20and%20were%20also%20generously%20given%20a%20chuck%20roast,%20some%20sirloin%20steaks,%20and%20a%20load%20of%20stew%20meat%20from%20another%20friend%20who%20buys%20sides%20of%20beef%20and%20has%20it%20broken%20down%20at%20the%20local%20meat%20locker.%3C/p%3E%3Cp%3EAnd%20that%20pork%20belly.%20We%20got%20the%20belly%20at%20the%20aforementioned%20meat%20locker%20(sadly,%20Russell%20had%20already%20been%20made%20into%20bacon),%20where%20we%20were%20told%20no%20one%20ever%20gets%20pork%20belly.%20The%20guy%20in%20charge%20brought%20one%20out%20and%20cut%20it%20off%20the%20ribs%20right%20in%20front%20of%20us;%20I've%20never%20seen%20sharper%20knives%20move%20so%20surely--this%20guy%20has%20made%20these%20movements%20thousands%20of%20times%20in%20his%20life,%20and%20it%20was%20a%20treat%20to%20see%20someone%20so%20seasoned%20in%20his%20craft%20do%20his%20thing.%20I%20rubbed%20the%20belly%20with%20oil,%20salt%20and%20pepper%20and%20roasted%20it%20with%20some%20carrots%20and%20onions;%20mashed%20potatoes%20and%20made%20a%20little%20sauce%20with%20some%20apple%20juice%20and%20the%20drippings%20of%20the%20pork%20once%20it%20was%20nice%20and%20crispy%20on%20top.%20Mmmm...%3C/p%3E%3Cp%3EThe%20next%20day%20there%20were%20breakfast%20burritos%20to%20make%20to%20cure%20a%20night%20of%20drinking.%20(By%20the%20way,%20did%20you%20know%20that%20in%20Iowa,%20there%20are%20stars%20in%20the%20sky,%20and%20you%20can%20see%20them%20at%20night?%20I'd%20forgotten,%20living%20in%20the%20city.%20I%20hear%20this%20happens%20in%20Montana,%20too.)%20The%20thoroughbred%20of%20a%20man%20that%20we%20were%20staying%20with,%20who%20was%20out%20with%20us%20the%20night%20before%20'till%20all%20hours,%20went%20to%20work%20at%205%20am,%20fishing%20at%2010:30%20am,%20and%20was%20back%20in%20time%20to%20clean%20the%20croppies%20he'd%20caught%20as%20the%20rest%20of%20us%20were%20just%20starting%20to%20function%20again.%20Amazing.%3C/p%3E%3Cp%3EAnother%20thing%20about%20Iowa--they've%20got%20these%20things%20called%20Maid-Rites,%20or%20Loosemeat%20Sandwiches,%20depending%20on%20where%20you're%20from.%20And%20for%20something%20so%20unimpressive%20looking%20and%20made%20of%20the%20simplest%20ingredients%20(Ground%20beef.%20Onion.%20Bun.),%20they%20are%20delicious%20and%20something%20I%20crave%20when%20they're%20not%20around.%20The%20stuff%20is%20simply%20sauteed%20(the%20actual%20Maid-Rite%20chain%20steams%20the%20meat,%20but%20I%20go%20for%20the%20sauteed%20version,%20believing%20that%20the%20older%20your%20cast%20iron%20skillet/flattop%20grill,%20the%20better%20the%20flavor%20that%20is%20going%20to%20come%20out%20of%20it)%20and%20put%20on%20a%20bun,%20unless%20you%20upgrade%20to%20the%20cheese-rite,%20or%20the%20coveted%20bacon-cheese-rite.%20I%20used%20to%20make%20them%20for%20the%20too-skinny%20food%20runner%20at%20the%20restaurant,%20but%20I%20used%20a%20crumbled%20piece%20of%20meatloaf,%20if%20only%20to%20pack%20some%20extra%20weight%20on%20him.%20Slather%20it%20in%20mustard%20(as%20much%20as%20I%20love%20strong%20french%20mustard,%20you%20kinda%20gotta%20go%20with%20yellow%20mustard%20here)%20and%20ketchup,%20get%20some%20pickles%20involved,%20put%20the%20sandwich%20in%20a%20bowl%20or%20something%20that'll%20catch%20the%20half%20of%20the%20sandwich%20that%20will%20inevitably%20fall%20off,%20and%20get%20a%20fork.%20The%20greatest.%3C/p%3E%3Cp%3EAnyway,%20it's%20really%20a%20culinary%20treasure%20trove,%20Iowa.%20It's%20got%20a%20pretty%20true%20version%20of%20genuine%20American%20food,%20and%20it's%20a%20great%20place%20to%20get%20in%20touch%20with%20what%20real%20people%20eat%20when%20they%20aren't%20eating%20foie-gras%20and%20caviar.%20Not%20that%20there's%20anything%20wrong%20with%20that.%3C/p%3E){kind=link}
