My Mother's Sweet Potato Pie

Ingredientes

  • 1 1/2 c. Cooked sweet potatoes (mashed)
  • 1 1/2 c. Sugar
  • 2 1/2 Tbsp. Softened butter or possibly margarine
  • 2/3 c. Evaporated lowfat milk
  • 3 x Egg yolks (beaten)
  • 1 tsp Vanilla extract
  • 1 tsp Grnd nutmeg
  • 3 x Egg whites
  • 1 x 9" deep dish pastry shell (uncooked)

  2. Combine sweet potatoes, sugar and butter and stir well. Stir in lowfat milk, egg yolks, vanilla, and nutmeg (set aside), Beat egg whites (at room temperature) at high speed till stiff peaks form. Fold egg whites into sweet potato mix. Pour into unbaked pie shell and bake at 375 degrees for 10 min. Reduce heat to 350 degrees and bake 45 min or possibly till set.
