%20I%20recently%20picked%20up%20on%20sale,%20I%20am%20realizing%20that%20the%20spiral%20cut,%20while%20making%20serving%20easier,%20is%20not%20conducive%20to%20keeping%20all%20of%20the%20moisture%20and%20flavor%20in%20the%20meat.%3C/p%3E%3Cp%3EI%20actually%20had%20a%20lot%20of%20fun%20with%20this%20ham.%3C/p%3E%3Cp%3ERetro%20Ham!%3C/p%3E%3Cp%3EAfter%203%20hours%20at%20325%20covered%20tightly%20with%20foil:%3C/p%3E%3Cp%3EJust%20out%20of%20the%20oven!%3C/p%3E%3Cp%3EOnce%20removing%20from%20the%20oven,%20I%20lifted%20the%20rack%20and%20spooned%20the%20liquid%20in%20the%20pan%20over%20it%20and%20let%20it%20sit,%20loosely%20tented%20in%20the%20foil,%20for%20about%201/2%20an%20hour%20or%20so%20before%20transferring%20to%20the%20carving%20board.%3C/p%3E%3Cp%3EThe%20artsy%20shot.%3C/p%3E%3Cp%3EI%20should%20have%20take%20a%20picture%20of%20it%20after%20it%20was%20carved.%20%20It%20looked%20as%20moist%20and%20tasty%20as%20it%20tasted.%20%20I%20was%20afraid%20that%20I%20had%20overdone%20the%20spices,%20etc.%20but%20this%20was%20just%20wonderful.%3C/p%3E%3Cp%3EI%20cut%20the%20potatoes%20into%20approximately%202%20inch%20chunks%20and%20started%20them%20%201%201/2%20hours%20into%20the%20ham%20baking%20process%20so%20they%20would%20have%2090%20minutes%20at%20the%20325%20degrees.%20%20Basically,%20I%20just%20cut%20potatoes%20into%202%20inch%20chunks,%20toss%20with%20a%20bit%20of%20olive%20oil,%20freshly%20ground%20pepper,%20and%20salt,%20and%20add%20maybe%201/3%20%E2%80%93%201/2%20cup%20liquid%20(in%20this%20case,%20liquid%20from%20the%20ham%20that%20was%20already%20part-way%20cooked)%20%20cover%20tightly%20and%20bake%20until%20soft.%20Then%20(optional)%20continue%20baking%20uncovered%20until%20more%20crisp%20on%20the%20outside.%3C/p%3E%3Cp%3EAlong%20with%20switching%20to%20this%20ham%20type%20and%20recipe,%20I%20am%20thinking%20I%20will%20also%20replace%20the%20baked%20mashed%20potatoes%20I%20have%20been%20serving%20on%20Easter%20with%20roasted%20potato%20chunks.%20%20Always%20good%20to%20make%20a%20change%20before%20one%20gets%20too%20stuck%20in%20tradition.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
