My Thick Split Pea soup

This is a very simple recipe, and my husband's favorite. No ham required.

Ingredientes

  • 2 C dried split peas
  • 4 C water
  • 4 C vegetable stock
  • 2 onions, chopped
  • 4 carrots, chopped
  • 4 stalks celery with leaves, chopped
  • 1 large Bay Leaf
  • 1 tsp thyme
  • 2 tsp salt
  • pepper

Direcciones

  1. Combine liquids and split peas in soup pot. Bring to a boil. While you are waiting chop the vegetables and add them to the pot along with the seasonings.
  2. After it comes to a boil, reduce heat to low, cover pot and simmer about an hour or until everything is very tender.
  3. Puree, adjust seasonings, serve.
