Receta Nalysnyky (Ukrainian Crepes)

Nah-less-knee-key. Traditional Ukrainian dish, tastes a whole lot better than it sounds. Rich melt in your mouth.

- TO MAKE CREPES.
- In a bowl, using a hand held electric mixer, beat eggs until light and fluffy.
- Add milk, flour and salt and beat until all ingredients are incorporated and batter is smooth.
- Heat a griddle or frying pan on medium/high heat.
- 5 Oil the pan lightly and pour batter to make 5" to 6" thin crepes.
- Cook crepes for about 1 minute or until lightly browned.
- Turn over and fry for just seconds.
- Continue to cook the crepes.
- ( As you get better you can roll 3 crepes as 3 more are cooking)
- TO MAKE CHEESE FILLING.
- Place the cottage cheese to a mixing bowl.
- Add egg, cream salt, and dill weed and mix to blend well.
- Preheat oven temperature to 350°F.
- Separate and place 1 crepe with the brown side down on a smooth surface.
- Spoon about 1 heaping tablespoon of cheese filling along one edge of the crepe.
- Roll the crepe over the filling and roll up.
- Continue to fill and roll the remaining crepes.
- Place the finished nalysnyky into a lightly buttered oven proof casserole dish in layers.
- Dot each layer with some butter.
- When ready to bake pour whipping cream over crepes until about 1/2 way up crepes.
- Bake covered in preheated 350 F oven for 30 minutes or until puffed up.
