Nana's Spanish Bean Soup

Ingredientes

  • 6 c. water
  • 1 pkg. Spanish beans (soak overnight)
  • 1 pouch saffron (comes in bean pkg.)
  • 1 bay leaf
  • 1 clove garlic
  • 1 med. onion
  • 1 ham hock
  • 2 chorizo sausage
  • 2-3 med. potatoes (minced to bite-size)

Direcciones

  1. Bring water to a boil and then reduce to medium heat. Dissolve saffron. Add in bay leaf, garlic and beans. Cook for approximately 3 hrs. Then add in onion, hamhock and sausage. Cook for 2 more hrs on simmer. Add in minced potatoes and simmer till potatoes are soft. (Approximately 2 more hrs - according to size of pcs cut.) Serves 6-8.
