Ingredientes

  • 250 gm Grnd beef or possibly chopped lamb, (8oz)
  • 2 x Cloves garlic, crushed
  • 2 1/2 x Cm, (1 inch) piece ginger grated
  • 1/2 tsp Grnd coriander seeds
  • 1/2 tsp Grnd cumin seeds
  • 1/2 tsp Chilli pwdr, up to 1, up to
  • 1/4 tsp Grnd cloves
  • 1 Tbsp. Cornflour salt
  • 1 x Egg yolk
  • 4 sm Hard-boiled Large eggs
  •     Oil for shallow-frying
  • 4 Tbsp. Oil
  • 5 x Cm, (2 inch) piece cinnamon stick
  • 6 x Cloves
  • 6 x Cardamom
  • 1 x Onion finely minced
  • 2 x Cloves garlic crushed
  • 2 1/2 x Cm, (1 inch) piece ginger grated
  • 2 tsp Grnd coriander seeds
  • 1 tsp Grnd cumin seeds
  • 1 1/2 tsp Chilli pwdr
  • 4 Tbsp. Natural yogurt
  • 1 x 400 g can tomatoes
  • 2 Tbsp. Minced coriander

Direcciones

  1. Mix together the meat, garlic, spices, cornflour and salt to taste. Bind with the egg yolk and divide the mix into 4 equal parts.
  2. With well floured hands, flatten each portion into a round, place a hard-boiled egg in the centre and work the meat round to cover. Roll into a ball.
  3. Heat the oil in a pan and shallow fry the kebabs till they are brown all over.lift out and set aside while making the sauce.
  4. Heat the oil in a saucepan, add in the cinnamon,cloves and cardamom and fry for a few seconds.Add in the onion, garlic and ginger and fry till golden.Add in the coriander, cumin and chilli pwdr and fry for 1 minute.Add in the yogurt, a spoonful at a time, stirring till it is absorbed before adding the next spoonful. Break up the tomatoes with a fork,add in them with their juices and simmer fir 1 minute. Add in the kebabs to the sauce, season with salt to taste and cook, uncovered,for 25 min till the sauce is thick. Stir in the minced coriander to serve.
  5. Note: The kebabs can also be served without the curry sauce, as part of a meal.
