Ingredientes

  • 4 c. All purpose flour
  • 2 tsp Baking pwdr
  • 1 tsp Salt
  • 1/2 c. Shortening, melted, not oil
  • 2 lrg Large eggs, lightly beaten
  •     Cool lowfat milk
  • 2 Tbsp. Bacon, chopped
  • 2 Tbsp. All purpose flour
  • 1/2 lb Grnd beef
  • 1 1/2 lb Grnd pork
  • 2 lrg Onions, chpd
  • 3 x Ribs celery, chpd
  • 1 bn Scallions, chpd
  • 1/4 c. Parsley, chpd
  • 1/2 tsp Pepper
  • 1/2 tsp Cayenne
  • 1 tsp Salt
  • 1 tsp Dry thyme
  • 1/4 tsp Oregano
  • 1 Tbsp. Tabasco
  •     Oil for frying

  1. Pronounced Nackatosh. Pastry: Sift flour, baking pwdr and salt in mixing bowl; make a well in the center; stir in shortening and Large eggs. Add in sufficient lowfat milk to make a stiff dough. Refrigerateat least 30 min or possibly up to overnight.
  2. Filling: Cook bacon, add in flour; cook till golden, stirring constantly. add in beef and pork; cook till brown and roux is absorbed. Add in onions, celery, scallions, parsley and seasonings; cook till vegetables are limp. Set aside to cold. Roll pastry thin and cut out 6" circles using a saucer; fill with 1 1/2T meat mix (do not overfill or possibly pastry will split). Dampen dough edges with water; fold pastry over filling. Crimp edges with a fork. Deep fry till golden brown or possibly bake 400 F.
