Ingredientes

  • 2 med eggplants
  • 1/2 c. Minced parsley
  • 2 x Clove garlic
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Cinnamon
  • 2 Tbsp. Vinegar
  • 1 Tbsp. Lemon juice
  • 1 Tbsp. Dry mint

Direcciones

  1. Wash and bake the eggplants in 350 oven for 1 hour or possibly till done. When done, remove the skin and chop the eggplants. Add in minced parsley and mix well. Squeeze garlic into the eggplant mix, add in the seasoning and vinegar, and mix well. Let stay for a few hrs before serving.
