Since it's never too early to start thinking about what to prepare for the upcoming holidays, we've decided to share our perspectives on the infamous Thanksgiving bird -- the source of much hype, frustration, and experimentation.
When it comes to turkey, it seems everyone is looking for the same thing – a perfectly browned bird with a crisp exterior and a lusciously juicy interior. We want it to taste great and produce collective “ooohs” and “aaahhhs” when it’s taken from the oven. .%20In%20addition,%20your%20typical%20grocery%20store%20turkey%20is%20a%20mass-produced%20Broad%20Breasted%20White%20Turkey,%20factory-farmed%20and%20injected%20with%20a%20slew%20of%20chemical%20antibiotics%20and%20hormones.%20So,%20it%E2%80%99s%20not%20necessarily%20the%20most%20healthy%20or%20sustainable%20choice.%3C/p%3E%3Cp%3ESo,%20what's%20a%20food-loving,%20perfection-seeking%20blogger%20to%20do?%20%20%20Well,%20we%20think%20we%20might%20have%20some%20suggestions.%3C/p%3E%3Cp%3EFirst,%20we%20opt%20for%20a%20locally%20raised%20organic%20turkey.%20These%20birds%20might%20be%20more%20expensive%20than%20regular%20grocery%20store%20birds,%20but%20they're%20well%20worth%20the%20cost.%20Not%20only%20are%20they%20good%20for%20the%20environment%20(just%20an%20added%20bonus,%20in%20this%20case),%20they%20are%20more%20flavorful%20than%20your%20average%20bird.%20%20To%20add%20to%20the%20magic,%20we%20like%20to%20brine%20our%20bird%20for%20about%2024%20hours%20before%20setting%20it%20up%20to%20cook%20in%20one%20of%20our%20favorite%20%E2%80%9Ckitchen%E2%80%9D%20tools,%20our%20Orion%20Convection%20Cooker,%20an%20outdoor%20barbeque%20tool%20that%20uses%20indirect%20heat,%20generated%20by%20charcoal,%20to%20cook%20(and%20optionally%20hot%20smoke)%20foods.%3C/p%3E%3Cp%3EI%20should%20probably%20clarify%20before%20I%20begin%20all%20my%20raving%20that%20we%20haven%E2%80%99t%20been%20paid%20to%20talk%20about%20this%20cool%20gadget.%20In%20fact,%20it%20was%20just%20dumb%20luck%20that%20got%20us%20hooked%20on%20backyard%20convection%20smoking.%20We%20got%20the%20Orion%20Cooker%20a%20few%20years%20back%20after%20spending%20some%20time%20reading%20the%20entries%20in%20the%20Orion%20Community%20forum%20while%20looking%20for%20a%20recipe%20for%20ribs.%20After%20drooling%20over%20entries%20about%20succulent%20smoked%20ribs,%20brisket,%20and%20chicken,%20we%20decided%20we%20needed%20one%20for%20our%20very%20own.%20So,%20we%20splurged%20on%20one%20for%20our%2010th%20wedding%20anniversary.%20And%20gosh,%20we%E2%80%99re%20glad%20we%20made%20the%20leap.%3C/p%3E%3Cp%3ENot%20only%20does%20the%20cooker%20produce%20stellar%20smoked%20ribs%20and%20absolutely%20fabulous%20smoked%20summer%20corn,%20but%20it%E2%80%99s%20an%20absolute%20wonder%20for%20cooking%20turkey.%20Moist,%20juicy,%20and%20delightfully%20smoky,%20we%E2%80%99ve%20never%20had%20a%20bad%20turkey%20come%20out%20of%20the%20Orion.%20The%20best%20part%20is,%20we%20can%20produce%20a%20full%20cooked,%20smoked%2012lb%20Thanksgiving%20turkey%20in%20about%20an%20hour%20and%20a%20half.%3C/p%3E%3Cp%3EThe%20biggest%20time%20investment%20we%20now%20put%20into%20making%20turkey%20is%20tied%20up%20in%20the%20brining%20process%20%E2%80%93%20and%20even%20that%20is%20pretty%20minimal.%20Our%20favorite%20brine%20is%20made%20with%20maple%20syrup,%20soy%20sauce,%20garlic,%20and%20freshly%20grated%20ginger.%20It%20provides%20the%20perfect%20subtle%20flavor%20for%20the%20turkey,%20and%20it%20ensures%20that%20even%20the%20breast%20meat%20of%20the%20bird%20is%20ultra-moist.%3C/p%3E%3Cp%3EAnd,%20oh%20my,%20you%20should%20smell%20it%20while%20it%E2%80%99s%20cooking%E2%80%A6%20To.%20Die.%20For.%3C/p%3E%3Cp%3EThis%20bird%20was%20smoked%20with%20cherrywood%20for%20an%20early%20Thanksgiving%20celebration%20with%20friends.%20And%20trust%20me%20when%20I%20say%20that%20everyone%20was%20scrambling%20for%20the%20leftovers.%20We%E2%80%99ll%20be%20blogging%20about%20an%20awesome%20sandwich%20we%20made%20with%20some%20of%20ours%20in%20the%20next%20few%20days.%3C/p%3E%3Cp%3ESince%20we%20realize%20that%20not%20everyone%20has%20access%20to%20a%20smoker%20or%20convection%20cooker,%20we%E2%80%99d%20like%20to%20assure%20you%20that%20a%20maple%20brined%20turkey%20roasted%20conventionally%20in%20the%20oven%20is%20also%20pretty%20darned%20impressive.%20For%20crisp%20skin,%20be%20sure%20you%20start%20the%20bird%20off%20at%20a%20high%20temperature%20(and%20unplug%20your%20smoke%20detectors%20for%20a%20bit)%20to%20get%20the%20bird%20nicely%20browned.%20Then%20proceed%20for%20the%20remainder%20of%20the%20cooking%20time%20at%20350F.%3C/p%3E%3Cp%3EIt%20will%20take%20about%20an%20hour,%20but%20once%20your%20kitchen%20fills%20up%20with%20the%20smell%20of%20that%20delicious%20maple%20turkey,%20you%20will%20wonder%20why%20you%20ever%20did%20it%20any%20other%20way.%3C/p%3E%3Cp%3EMaple%20Brined%20Turkey%20%E2%80%93%20Smoked%20or%20Roasted%3C/p%3E%3Cp%3EAnd%20be%20sure%20to%20pay%20a%20visit%20to%20our%20friends%20over%20at%20Haute%20Apple%20Pie.%20%20They're%20doing%20a%20Thanksgiving%20recipe%20round-up%20that%20shouldn't%20be%20missed%20(including%20our%20turkey%20recipe!)%3C/p%3E%3Cp%3E%C2%A9BURP!%20Where%20Food%20Happens%3C/p%3E){kind=link}
