Ingredientes

  • 1/2 cup Salad Oil
  • 1 cup Garlic
  • 2 1/2 lbs Celery
  • 2 1/2 lbs Carrots
  • 2 1/2 lbs Onions
  • 1/2 cup Basil
  • 1/2 cup Oregano
  • 1 cup Thyme
  • 1/2 cup salt
  • 5 lbs potatoes
  • 1 lb Roux
  • 5 lbs Chopped Clams
  • 3 3/4 gals Clam Juice

Direcciones

  1. In a steam kettle saute oil and garlic about 2 minutes
  2. Add diced vegetables and saute for 10 minutes or until vegetables are tender.
  3. Add herbs and salt.
  4. Add clam stock and bring to a boil.
  5. Add potatoes and bring to a boil again.
  6. Add roux and chopped clams, reduce heat and simmer for one hour.
