New Mexico Spoon Bread

Ingredientes

  • 2 c. cornmeal
  • 1 c. flour
  • 2 T sugar
  • 1/4 teaspoon salt
  • 1 1/2 T baking pwdr
  • 3 large eggs
  • 1/2 c. oil
  • 1/2 c. lowfat milk
  • 1 (#2) can cream style corn or possibly equivalent fresh corn
  • 2 cans (4 ounce) minced green chilies
  • 2 c. grated cheese, cheddar or possibly Monterey Jack
  • 1 med. onion, minced or possibly 1 teaspoon onion flakes (opt.)

Direcciones

  1. Mix dry ingredients. Blend in large eggs, oil and lowfat milk. Stir in corn. Stir in chilies and cheese and onions. Bake in 2 greased 9 inch square pans for 30 min at 350 degrees or possibly in a 13 x 9 inch pan for 50 to 60 min at 325 to 350 degrees till golden brown.
