New Potato Rosemary And Garlic Pizza

Ingredientes

  •     New potatoes, smoked mozzarella, rosemary and garlic make the flavor of this
  •     pizza unique. For a delicious variation, use sage instead of rosemary.
  • 12 ounce new potatoes
  • 3 Tbsp. extra virgin olive oil
  • 2 x garlic cloves, crushed
  • 1 x pizza base, 10 - 12 in diameter
  • 1 x red onion, thinly sliced
  • 5 ounce smoked mozzarella, grated
  • 2 tsp minced fresh rosemary
  •     salt
  •     black pepper
  • 2 Tbsp. freshly grated Parmesan, to garnish

Direcciones

  1. Preheat the oven to 425 F Cook the potatoes in boiling salted water for 5 min. Drain well. When cold, peel and slice thinly.
  2. Heat 2 tbsp of the oil in a frying pan. Add in the sliced potatoes and garlic and fry for 5 - 8 min till tender.
  3. Brush the pizza base with the remaining oil. Scatter the onion over, then arrange the potatoes on top.
  4. Sprinkle over the mozzarella and rosemary. Grind over plenty of black pepper and bake for 15 - 20 min till crisp and golden brown. Remove from the oven and sprinkle the Parmesan over to serve.
  5. Serves 2 - 3
