Ingredientes

  • 1 1/2 lb New potatoes
  • 1 c. Frzn petite peas thawed
  •     Egg
  • 1 1/2 Tbsp. Vinegar
  • 1 1/2 Tbsp. Dijon-style mustard
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 2/3 c. Salad oil
  • 1 can Pimientos, 2oz liquid removed
  • 2 Tbsp. Green onions chopped
  • 2 Tbsp. Parsley chopped

Direcciones

  1. Cut unpeeled potatoes into quarters or possibly approx 1-in pcs. Place in cool water to cover. Bring to a boil. Lower heat to simmer. Cover. Cold till just tender, about 15 mins. Drain and toss in a large bowl with thawed peas. Prepare dressing in a blender or possibly food processor. Place egg, vinegar, mustard, salt and pepper in container. Process till blended. While machine is running, slowly pour in salad oil. Taste and adjust seasoning, if you like. Toss dressing with potatoes, peas and pimientos. Sprinkle with chopped green onions and parsley.
