These are all recipes that work for weeknight meals or entertaining: a Heart of Palm Salad, a Vegetarian Portobello Mushroom Burger and Savory Oven-Fried Chicken.
Even though the first day of school is only a few weeks away (ack – how did that happen?!), we are still focused on grilling and light, healthy meals. Whether you’re looking for a vegetarian portobello mushroom burger, a flavorful hearts of palm and tomato salad or healthy oven-fried chicken, there’s a little something for everyone here. While the fresh ingredients speak for themselves, the sauces really take each of these dishes over the top. The burgers are topped with a chimichurri dressing, there’s a light basil dressing for the hearts of palm salad and a buttermilk-Dijon sauce is drizzled over the chicken. Bring on the flavor!

Hearts of Palm, Cucumber & Tomato Salad
Each time I use hearts of palms, such as in a Pita Sandwich with Chicken, Hearts of Palm & Chimichurri Dressing, I wonder why I don’t regularly stocked them in my pantry. They can be found in the canned vegetable section of most supermarkets. In this salad, the hearts of palm are sliced and mixed with sweet tomatoes, crisp cucumbers and a light basil dressing. This would be a hit at your next barbecue!

Grilled Portobello Mushroom Burgers with Chimichurri Sauce
If you’re looking for “meaty” without the meat, portobello mushrooms are the ticket. They grill up easily, holding the flavors of simple marinade, and can be served straight or as a burger. In this recipe, I topped the mushrooms with melted mozzarella cheese, fresh tomatoes and a herb- and garlic-packed dressing. Healthy does not mean boring, my friends!

Crispy Oven-Fried Chicken with Buttermilk Dijon Sauce
There is something to be said for a really good piece of fried chicken, but when you’re focusing on healthy foods for a healthy lifestyle and/or weight loss, “fried” doesn’t fit in well, at least not on a regular basis. That’s where this oven-fried version comes in. You can use chicken breasts for this recipe, but I opted for skinless drumsticks and thighs because the extra moisture in the meat works well for this recipe.
Each piece of chicken is dipped in a mixture of buttermilk and Dijon mustard, then rolled in corn flakes and pecans. And don’t forget the sauce. Dijon mustard, buttermilk, honey and hot sauce come together for a sauce that makes this chicken something to remember.
