There is no replacing champagne for New Year’s and other celebratory occasions. It’s an essential element for celebrating and nothing gets your midnight buzzing quite like champagne. But for those of us who’d prefer a mixed drink, these Champagne Cocktails made with fresh blackberries are the perfect way to ring it in. Champagne Cocktails This champagne cocktail happened a bit by chance. I wanted a fruity take on champagne but not something that would be super sweet. I love the idea of a champagne cocktail but traditionally, they are made with cognac and bitters. Even though old fashioned cocktails are coming back into fashion, I don’t think I’ll ever be a fan of either cognac or bitters. My friend and I enjoyed these Blackberry Gin Martinis this past summer. She sent me a text just as I was trying to figure out this cocktail and that’s when it came to me – a mashup of fresh blackberries and dark rum topped with some bubbly champagne! I went with rum as a dark liquor alternative to cognac as it is a little smoother without adding its own contrasting flavors into the mix, much like an Amaretto would. If you’re a Scotch drinker, that would also be a delicious alternative. You can make a blackberry syrup for a “cleaner” and darker hued cocktail, but I liked the freshness and lack of added sweetness that came from using fresh blackberries.
