The amount of Christmas parties my five year old niece went to this Christmas season was amazing. Every time she came home, she was proud to show off her new presents. She would then proclaim that being nice pays off indeed! Then she would look at her cousin and say, “Behave yourself or you get no presents from Santa“. Her cousin would silently look at her, put another of his favourite corn curl or plantain chip in his mouth and simply enjoy his snack. He seemed not to care at all. Once he had his snack with him he couldn’t care less about being nice or naughty. She loves to remind him of presents from Santa, while he is eating his snacks, which he should not be eating too much of in the first place.

The Christmas season is always enjoyed with a little snack or dessert at the side. No child can resist eating the many snacks parents bring home, especially for them during this season. I remember, growing up there was always a bag of marshmallows, a tin of Danish Butter Cookies, sweets, potato chips, fig rolls etc. This had to be balanced with apples, pears and grapes. Lots of it. Which parents did not buy these back in the day?

Well, this year I felt I should not encourage my son to be eating too much commercial snacks. He was not too pleased about this idea, but he was a good sport. So, we set out to make some no bake coconut oatmeal cookies for him. It would be his snack for the season. It turns out that this could be everyone’s snack for the season since it is so quick and easy. It is chocolately delicious! He loves it. I love it. You can taste every ingredient in the cookie. It is amazing. This is a must try recipe!

A No Bake Coconut Oatmeal Cookies Recipe

So I had some cocoa powder left over from the last recipe, cocoa brownies. That is why I found it best to present this recipe to you. Now, I have to admit, the dark chocolate look is obvious and can be a little peculiar, especially if you never saw a no-bake cookie before. However, when you taste this treat, I promise you will say “Wow” or close your eyes as you savour a tiny morsel while you eat it. This is a simple recipe. You just melt the sugar and add the rest of the ingredients, then mix. Now, you should keep the pot on the stove and work from there. The heat will allow you shape the drops of dough without getting too sticky too fast. So, here is our no bake coconut oatmeal cookies recipe. Enjoy!

Mix sugar, salt, butter and milk and cook until sugar melts.

Boil for 3 minutes.

Turn off the heat. Add coconut, cocoa and oatmeal while sugar mixture is hot.

Add vanilla and mix together thoroughly.

Drop tablespoon of the mixture on wax paper or a greased dish to cool.

Note: If desired, nuts and raisins may also be added.
