Receta No-Bake Lemon Cheesecake

This is a lovely cheesecake that I found via www.nibbledish.com by Joannajane. It is really easy to make and truly delicious. I modified just a little by adding some lemon zest and some of its fruity bits into and on the cake.

- Mix the biscuits crumbs with the melted butter and and put in on a greased tin as a base. Press till even and keep in the fridge to set for about 1 hour.
- Whisk the cream cheese and double cream till thick and creamy.
- Add the icing sugar and lemon juice and mix till smooth and thick.
- At this stage add in some of the zest and fruity bits (optional).
- Add the mixture on the biscuit base and spread evenly. Top with a little more of zest and fruity bits if desired.
- Leave to set in the fridge for several hours till the topping has set.
- (Note: the cake cuts and tastes better the next day as it has had enough time to set).
