Receta No Croutons Required - Soups and Salads
by Tinned Tomatoes

March has arrived, the sun is shining and everyone is feeling a bit more cheery. I noticed a difference in the entries for this month's No Croutons Required too, more salads are starting to appear as people shrug of the Winter.

No Croutons Required is now open to all veggie soups and salads, so there is a great variety of dishes. They are a bit late in going up, but I do hope you enjoy them. Remember to head over to Lisa's Kitchen where the March No Croutons Required will open later today.

No Croutons Required

Vegetarian Soups and Salads

Chef: Jeanne

Location: London, England, UK

Jeanne paired carrots with cumin in this creamy soup.

Jeanne became intrigued with spices as a child. Her mother had a Danish Digsmed spice wheel which she and her brother were fascinated with as children. She remembers smelling the cumin, but doesn't remember her mother cooking with it. Jeanne uses it in her soup to bring a warmth to the sweet flavour of the carrots.

It looks heavenly!

Chef: Janet

Location: Houston, Texas, USA

Janet always comes up with something different and I hadn't heard of this soupy stew before.

Poor Janet has two sprained knees, no don't ask, but she still managed to throw together this stew. It's ingredients are said to be anti-inflammatory, so just what poor Janet needs. A warming soup filled with cabbage, mushrooms, garlic and tofu. Kimchi, pickled napa cabbage.

I hope you feel better soon Janet.

Recipe: Honey Roast Root Veg Soup

Chef: Jane

Location: Cornwall, South West England, UK

What a gorgeous colour! Don't you just want to dive in?

Janie wasn't so sure when she made it. It all sounded so good in her head, parsnips, sweet potato and honey. As she was pouring it she did wonder f it would be too sweet, but with the hint of chilli, it was divine.

I am definitely going to try this. Roasting root veg is such a good idea for adding a depth of flavour to soups.

Recipe: Thai Red Curry Vegetable Soup

Chef: Lisa

Location: London, Ontario, Canada

Poor Lisa hasn't been well, so soup it had to be. Lisa made this soup with Thai reed curry paste as the base. Never made your own? Lisa will show you how and you can store it in a sealed jar for a month or so. To the paste she added dried wild mushrooms, cauliflower, tomatoes, green beans, oyster mushrooms and bean sprouts as well as spices and coconut milk.

It looks amazing Lisa! Get well soon x

Recipe: Sesame Green Bean Salad

Chef: Mireille

Location: New York, USA

Mireille picked her own green, yellow and purple beans at a local farm for her salad.

Lightly cooked beans, still with a crunch, coated in some fresh mustardy salad dressing and finished off with sesame seeds.

Mmmmmmmm! Gorgeous side dish Mireille.

Recipe: Roasted Pumpkin and Salsa Soup

Chef: Mayuri

In Kenya pumpkin is more often used to make curries, or cooked with kale and coconut or cooked into a dry vegetable to accompany a meat dish, but Mayuri decided she would use it to make soup. First she roasted the pumpkin and then she added cumin seeds and dried herbs for flavour. She finished off her soup with a topping of fresh salsa, which is a really lovely idea.

Recipe: Carrot, Lemon Thyme and Celeriac Soup

Chef: Dom

Location: Belleau, Lincolnshire, England, UK

I love the flavours that Dom pulled together in this soup and it looks so lush!

A smooth blended soup of celeriac, carrots and lemon thyme. A simple but delicious soup finished off with a dollop of Greek yoghurt and a sprinkling of fresh lemon thyme. Slurp!

Recipe: Coconut Dal (red lentils with coconut milk and cranberries)

Chef: Gayathri

Snow struck and Gayathri was at home for two days with her hubby and three children. At a loss for something to do she cooked and cooked and cooked. One of the dishes she whipped up was this dal.

I love dal and make it almost weekly but I've never added cranberries, so that is food for thought. Gayathri served her dal with rice and a topping of cucumber and spring onions. Doesn't it look droolworthy?

Recipe: Instant Carrot and Tomato Soup

Chef: Lucy

First I'd like to say it's nice to see Lucy's smiling face when you visit her blog. I don't remember seeing one before, but it is always nice to see who you are talking to.

I've never thought of having tomatoes and carrot as the main ingredients of soup, but it looks absolutely delicious. All finished off with a swirl of cream, creme fraiche or Greek yoghurt on the top. Bookmarked!!!!

Recipe: Mushroom Paprikash with Grain Free Dumplings

Chef: Sarah

Location: Singapore, Southeast Asia

Another lovely smiley blogger photo greats you when you visit Simply Cooked. Sarah lives with a meat eating husband, but she loves her veg and you can see that in her soup.

During her undergraduate degree, Sarah spent a semester in Budapest, Hungary, where her friendly neighbour taught her to cook traditional Hungarian dishes including this Paprikash. So it brings back warm memories for her. A spiced mushrooms soup topped with more mushrooms and little grain free dumplings. Just stunning!

Recipe: Cheap as Chips and Very Speedy Tomato Soup

Chef: Gingey

Location: Midlands, England, UK

A quick and easy tomato soup that won't break the bank. This slurpilicious tomato soup comes in at 90p a portion and can be whipped up from store cupboard ingredients and fragranced with fresh herbs. We should all have this soup on our menu from time to time.

Great entry Gingey!

ps Gingey also has a nice smiley photo on her blog. Maybe I shouldn't have started this, haha.

Recipe: Carrot, Parsnip and Coriander Soup

Chef: Antonia

Location: Cotswolds, England, UK

Antonia is sick of this wet Winter we are having. Rain, rain and more rain. Not good when you have a toddler to occupy and even worse when their is a swollen brook near you, ready to burst it's banks.

The solution, homemade Carrot, Parsnip and Coriander Soup served with homemade Celeriac & Blue Cheese Soda Bread. WOW! That is certainly a solution. When are you making it next? *calculates distance to Cotswolds*

Recipe: Black-Eyed Peas Fresh Veggie Salad

Chef: Pridhi

They say if you have lots of different colours on your plate, you are more likely to be getting everything you need in your diet and Pridhi definitely brings us that with her colourful salad.

Black-eyed peas cooked with spices, red, green and yellow pepper, broccoli, chilli, herbs and lemon. Cowabunga!!

Recipe: Cream of Mushroom Soup

Chef: Helen

Location: Cambridge, England, UK

I love, love, love mushrooms, so I was very excited to see this soup. Helen' hubby and little girl weren't as excited as me, so maybe I should move in with Helen! Or at least visit when she is making this soup.

Helen intensified the earthy mushroom flavour of the soup with dried mushrooms. There is also dried sherry, herbs and double cream in there. Mmmmmmmm! Happy days!

And there ends this month's roundup of soups and salads. A veritable cornucopia of tasty soups and salads. So nice to see some NCR newbies too.
