No Fat Pineapple Upside Down Cake

Ingredientes

  •     Non-stick cooking spray
  • 1/4 c. brown sugar, packed
  • 2 Tbsp. Karo light corn syrup
  • 1 Tbsp. lemon juice
  • 7 x canned pineapple rings, well liquid removed
  • 7 x maraschino cherries
  • 1 c. flour
  • 1/4 c. cornstarch
  • 1 1/2 tsp baking pwdr
  • 1/2 tsp salt
  • 1 c. sugar
  • 2/3 c. skim lowfat milk
  • 2 x egg whites
  • 1/3 c. Karo light corn syrup
  • 1 tsp vanilla

Direcciones

  1. Topping:Preheat oven to 350 degrees. Spray 9-inch round pan with cooking spray.
  2. Add in brown sugar, corn syrup and lemon juice; stir to combine. Place pan in oven 3 min. Remove. Arrange pineapple rings and cherries in pan; set aside.
  3. Cake:In large bowl, combine flour, cornstarch, baking pwdr and salt. In medium bowl with wire whisk, stir sugar and lowfat milk 1 minute. Add in egg whites, corn syrup and vanilla; stir till blended. Gradually stir into flour mix till smooth. Spoon batter over pineapple. Bake 35 -40 min, or possibly till toothpick inserted in center comes out clean.
  4. Immediately loosen cake from pan; invert onto serving plate.
  5. Serves 12
