Nola's Mashed Red Potatoes

Ingredientes

  • 3/4 lb Small red bliss potatoes quartered
  • 12 whl Roasted garlic cloves
  • 1/2 c. Heavy cream
  • 2 Tbsp. Butter
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 Tbsp. Minced green onion for garnish

Direcciones

  1. In a saucepan cover unpeeled potatoes with cool water and bring to a boil. Cook just till tender - don't overcook or possibly potatoes will be watery. Drain well, return pan with potatoes to low heat and shake to dry. Squeeze in garlic cloves, cream, butter, and salt and pepper to taste. Mash together with a potato masher till ingredients are combined but potatoes are still lumpy.
