Receta Noodle (Pasta) Salad with Ginger Peanut Dressing Recipe

Ingredients:
For the salad -
- a fist full of spaghetti (or soba noodles)
- water and salt (to cook the noodles)
- few drops of oil
- 1/2 medium sized cucumber, peeled, chopped into pieces
- 1 small bell pepper or capsicum, chopped into pieces
- 1/2 carrot, peeled and chopped into thin strips
- few tbsp of chopped spring onion and fresh coriander leaves
- For the dressing -
- 2 tbsp peanut butter
- 2 tsp soya sauce
- 1 tsp sugar
- 1 tbsp finely chopped fresh ginger
- 2 tsp fresh lime juice
- 1 clove garlic, minced
- 1 tsp fresh lemon zest
- 2 tbsp chopped cilantro
Preparation:
1. Cook noodles (as per package instructions) in salted boiling water. Drain and lightly rinse in cold water. Drian again and add few drops of oil. Toss so that noodles don't stick to each other.
2. Puree together in a blender all the ingredients listed under "dressing" - peanut butter, soya sauce, sugar, ginger, line juice, garlic. cilantro and lemon zest until smooth and creamy. Add 2 to 3 tbsp of warm water if you want to adjust the consistency.
3. In a bowl - place noodles, cucumber, bell pepper, carrot, spring onion and ginger-peanut dressing. Toss together and garnish with cilantro and chopped dry roasted peanuts (optional). Serve.
