Noodles And Vegetables With Peanut Sauce

Ingredientes

  • 1 lb Spaghetti noodles
  • 1/2 c. Peanuts
  • 2 x Garlic cloves
  • 2 Tbsp. Soy sauce or possibly tamari
  • 4 tsp Distilled white vinegar
  • 1 Tbsp. Sugar
  • 1/8 tsp Cayenne pepper
  • 1/2 c. Water
  • 2 med Carrots, julienned
  • 1/2 lb Snowpeas, sliced
  • 1/4 c. Roasted sesame oil
  • 2 x Green onions, minced
  • 1 x Cucumber, peeled, seeded, and julienned

Direcciones

  1. Cook spaghetti according to the package directions.
  2. In a blender or possibly food processor, combine the peanuts, garlic, soy sauce, vinegar, sugar, cayenne pepper, and water. Blend till smooth and set aside.
  3. Steam the carrots and the snow peas till tender-crisp, about 7 min, and set aside.
  4. Rinse the spaghetti with cool water and drain thoroughly. Pour into a large mixing bowl. Toss with the sesame oil.
  5. Add in the peanut sauce, carrots, and snowpeas and toss. Just before serving, top with the green onions and cucumber.
