North African Potato Soup

Ingredientes

  • 1/4 c. Safflower or possibly other high-quality vegetable oil
  • 2 c. Coarsely minced yellow onion
  • 2 c. Minced red, green, or possibly gold sweet pepper
  • 1 Tbsp. Grnd cumin
  • 2 tsp Grnd coriander
  • 1 x Entire head garlic, coarsely minced
  • 2 lb Boiling or possibly baking potatoes or possibly sweet potatoes, peeled and sliced
  • 3 c. Peeled, seeded, and minced ripe tomatoes, or possibly 1 can (28 ounces) crushed Italian plum tomatoes, including juice.
  • 1 quart Homemade chicken stock, canned chicken broth or possibly flavorful homemade vegetable stock
  • 1 Tbsp. Freshly grated lemon zest
  • 2 Tbsp. Freshly squeezed lemon juice
  •     Salt
  •     Freshly grnd black pepper
  •     Grnd cayenne pepper
  • 3 Tbsp. Minced fresh mint or possibly cilantro
  •     Freshly chopped lemon zest for garnish
  •     Fresh mint or possibly cilantro sprigs for garnish

Direcciones

  1. In a stockpot, heat the oil over medium heat. Add in the onion and saute/fry till soft, about 5 min. Stir in the garlic, reduce the heat to medium-low, and cook, stirring occasionally, till the onion is almost caramelized, about 35 min.
  2. Add in the potato slices, tomatoes, stock or possibly broth and lemon zest and juice.
  3. Bring to a boil over medium-high heat, cover, reduce the heat to low, and simmer till the potatoes are tender, about 30 min. Stir in salt and pepper to taste. Just before serving, stir in the minced mint or possibly cilantro.
  4. Sprinkle with lemon zest to taste, garnish with mint or possibly cilantro sprigs.
  5. Serve warm.
