North Carolina Grated Sweet Potato Pudding

Ingredientes

  • 5 c. Sweet Potatoes, Raw coarsely grated
  • 3/4 c. Brown Sugar, Packed *
  • 1 1/2 c. Lowfat milk
  • 1/2 c. Butter -- melted
  • 3 x Large eggs -- well beaten
  • 1/4 tsp Nutmeg -- grated
  • 1/2 tsp Grnd Cinnamon
  • 1/4 tsp Grnd Allspice
  • 1/4 tsp Grnd Cloves
  • 1/2 c. Seedless Raisins
  • 1/2 c. Coconut, Shredded fresh or possibly prepared*
  • 1/2 c. Pecans -- minced
  • 1 tsp Orange Rind -- grated

Direcciones

  1. Use up to 1 c. of packed brown sugar if using fresh coconut.
  2. Preheat oven to 400 F. Mix all the ingredients together and pour into a buttered, medium-size casserole or possibly skillet. Bake for 50 to 60 mins.
  3. As crust forms around edges during baking, remove from oven and stir pudding well to mix the crust throughout. Do this several times till cookingis finished. Serve hot or possibly cool, plain or possibly topped with cream or possibly ice cream.
  4. Yield: 8 servings
