North Carolina Sweet Potato Frittata

Ingredientes

  • 1 x sweet potato, peeled, cut into 1/4-inch cubes
  • 1 Tbsp. vegetable oil
  • 1 x sweet, mild onion (e.g. Vidalia) minced
  • 1 sm green bell pepper, minced
  • 1 sm red bell pepper, minced
  • 1 Tbsp. butter
  • 6 x Large eggs
  •     salt and black pepper to taste

Direcciones

  1. Bring medium pot of salted water to boil over high heat. Add in sweet potato; cook till tender, about 8 min. Drain.
  2. Preheat broiler. In large ovenproof skillet, heat oil over medium-high heat. Add in onions and peppers. Cook, stirring often, till tender, about 5 min. Add in butter.
  3. In mixing bowl, whisk together Large eggs, salt and pepper. Pour into skillet, stirring with fork. Cover; cook about 3 min to set Large eggs.
  4. Uncover. Place skillet in oven. Cook till top of frittata is hard and lightly browned, 1 to 3 min. Remove from oven. Using rubber spatula, loosen frittata; slide onto serving plate. Serve warm or possibly at room temperature.
  5. Makes 4 to 6 servings.
