Receta North Carolina Sweet Potato Frittata

- Bring medium pot of salted water to boil over high heat. Add in sweet potato; cook till tender, about 8 min. Drain.
- Preheat broiler. In large ovenproof skillet, heat oil over medium-high heat. Add in onions and peppers. Cook, stirring often, till tender, about 5 min. Add in butter.
- In mixing bowl, whisk together Large eggs, salt and pepper. Pour into skillet, stirring with fork. Cover; cook about 3 min to set Large eggs.
- Uncover. Place skillet in oven. Cook till top of frittata is hard and lightly browned, 1 to 3 min. Remove from oven. Using rubber spatula, loosen frittata; slide onto serving plate. Serve warm or possibly at room temperature.
- Makes 4 to 6 servings.
