"Not" Cream Cheese Cake

Ingredientes

  •     *FOR CRUST (CAN BE DOUBLED OF YOU LIKE, (can be doubled of A LOT OF CRUST)***, you like a lot of
  • 1 c. Graham Wafer Crackers
  • 2 x Tablespons sugar
  • 2 Tbsp. Margarine, melted
  • 1/2 tsp Almond extract flavoring
  • 2 Tbsp. Unflavored gelatin pwdr, (I use Knox brand)
  • 1 1/4 c. Canned lowfat milk, (skim)
  • 2 tsp Lemon rind, grated
  • 2/3 c. Sugar
  • 1 tsp Pure vanilla extract
  • 2 1/2 x Cottage cheese, (1% lowfat milk fat)
  •     Cherry Pie Filling or possibly Blueberry Sauce, seeded and cut into strips

Direcciones

  1. Put Graham crumbs into a bowl. Heat the margarine and stir in the sugar and almond extract to the margarine. Add in to the Graham crumbs and stir till proportionately distributed.
  2. Press crumb mix into the bottom of a 9x9 glass Pyrex dish, or possibly a round 9" sprin-form pan (the kind with removable sides). Chill.
  3. Directions for Filling
  4. In a food processor, beat the cottage cheese till satiny smooth
  5. (very important for a smooth texture).
  6. Scald the lowfat milk (microwave for about 2-3 min). While it is heating, soften gelatin pwdr in c. of cool water and let stand 1 minute. Combine these two ingredients along with the sugar, vanilla and lemon peel. Add in to the "smooth" cottage cheese mix and gently beat just till combined. Do not over whip, creating a lot of foam.
  7. Pour mix into your prepared pie crust and chill till set. Decorate or possibly serve with Cherry Pie filling or possibly Blueberry sauce. Or possibly put the toppings on the table and let your guest decide.
