Ingredientes

  • 1 1/4 c. Grnd walnuts
  • 1 1/2 c. Sugar
  • 3/4 c. Butter, softened
  • 2 med Bananas, peeled
  • 1 x Egg
  • 2 c. Flour
  • 2 tsp Baking pwdr
  • 1 1/2 tsp Grnd cinnamon
  • 1/2 tsp Grnd nutmeg
  • 1/4 tsp Salt
  • 1 x Ripe small banana, peeled
  • 3 Tbsp. Raspberry jam

Direcciones

  1. Line 18 2 1/2-inch muffin c. with paper liners.
  2. In shallow dish, combine 3/4 c. walnuts and 1/2 c. sugar; set aside.
  3. In large bowl, beat remaining 1/2 c. nuts with remaining 1 c. sugar and butter till light and fluffy. Puree 2 medium bananas in blender (1 c.).
  4. Beat pureed bananas and egg into sugar-butter mix.
  5. In medium bowl, combine flour, baking pwdr, cinnamon, netmeg, and salt.
  6. Beat dry ingredients into banana mix till well mixed.
  7. Mash small banana in a small bowl; stir in raspberry jam.
  8. For each muffin, roll 1 heaping Tbsp. dough in walnut-sugar mix to coat. Place in lined muffin c.. Make a dimple in the center of dough with back of spoon. Spoon 1 tsp. jam mix into center. Roll 1 more heaping Tbsp. od dough in walnut-sugar mix. Drop over jam mix.
  9. Bake in 400 F oven for 15 to 20 min or possibly till wooden pick inserted in center comes out clean. Cold slightly on pan; cold slightly on wire rack.
  10. Serve hot.
