Ingredientes

  • 1 c. Oat bran
  • 1 c. All-purpose flour
  • 2 tsp Baking soda
  • 1 Tbsp. Sugar
  • 1 med Extremely ripe banana mashed
  • 2 tsp Vanilla extract
  • 1 1/2 c. Plain lowfat yogurt
  • 4 x Egg whites
  • 2 Tbsp. Unsalted butter or possibly margarine melted
  •     Hot maple syrup
  •     Fresh blueberries optional

Direcciones

  1. In a medium bowl, toss together oat bran, flour, baking soda and sugar. Using a wooden spoon, stir in banana and vanilla till well blended. Add in yogurt; mix well. Heat a large skillet, preferably cast iron, over moderate heat.
  2. In a separate bowl, beat egg whites with an electric mixer till soft peaks form. Beat 1/3 egg whites into batter to lighten. Mix in remaining egg whites with a rubber spatula. Mix in melted butter.
  3. Ladle a few 1/4 c. scoops of batter into heated skillet, spreading batter into 3 1/2-inch to 4-inch circles. Cook till bubbles appear on the surface. Flip and cook till bottoms are well browned, about 1 minute. Serve with maple syrup and blueberries.
  4. This recipe serves 4.
