Oatmeal Cookies-Betty Crocker Style
About a hundred years ago (or more like 21, to be exact), my mom gave me my first cookbook at a wedding shower and it was none other than The Betty Crocker Cookbook! 21 years later, I have tons of cookbooks, but I always seem to come back to that one for the best in basics. These oatmeal cookies are basic, but oh so good!
I have mixed them up in any number of ways from adding coconut, chocolate chips or nuts, to topping with toasted coconut, or a fruit flavored jelly–or just eating the dough raw…
Oatmeal Cookies-Betty Crocker
INGREDIENTS:
- 3/4 cup margarine or butter
- 1 3/4 cups flour
- 1 cup packed brown sugar
- 1/2 cup sugar
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 cups rolled oats
DIRECTIONS:
In a mixing bowl beat margarine or butter with an electric mixer on medium high speed for 30 seconds. Add abut half of the flour, the brown sugar, sugar, egg, baking powder, vanilla, baking soda and cinnamon. Beat until thoroughly combined. Beat in remaining flour. Stir in oats.
Drop by rounded teaspoons 2 inches apart onto a ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes or until edges are golden. Cool on a wire rack.
