.%20Simple%20enough?%20I%20think%20so.%20I%20was%20a%20little%20skeptical%20of%20how%20they%20might%20taste,%20but%20I%20really%20should%20not%20have%20been.%20I%20shared%20a%20few%20bites%20with%20my%20taste-testers,%20who%20were%20shocked%20at%20how%20simple%20and%20healthy%20it%20was.%20And%20I%20put%20a%20delicious%20topping%20on%20it%20to%20give%20it%20extra%20flavor.%20That%20definitely%20helped.%20But%20the%20topping%20deserves%20its%20own%20post.%20Let's%20focus%20on%20the%20pancakes%20for%20now.%3C/p%3E%3Cp%3EThe%20recipe%20tells%20you%20to%20blend%20it%20all%20up%20in%20a%20blender%20or%20processor,%20but%20if%20you%20have%20quick%20oats%20(what%20was%20on%20hand%20in%20the%20building)%20you%20can%20just%20mix%20it%20with%20a%20spoon.%20It%20gave%20it%20a%20really%20nice%20texture%20that%20everyone%20appreciated.%20If%20you%20have%20old-fashioned%20oats,%20you%20REALLY%20need%20to%20at%20least%20blend%20(or%20food%20chopper)%20those%20a%20bit%20%20in%20a%20blender%20or%20processor%20so%20that%20they%20make%20a%20more%20cohesive%20batter.%20The%20batter%20is%20already%20thick%20and%20I%20spread%20it%20out%20with%20the%20measuring%20cup%20I%20was%20using%20for%20a%20scoop.%20I%20used%202%25%20cottage%20cheese%20this%20time,%20but%20I%20would%20try%20it%20with%20small%20curd%20whole%20milk%20cottage%20cheese,%20too.%20The%20original%20recipe%20used%20all%20egg%20whites,%20but%20I%20used%20a%20mix%20(some%20of%20the%20yolks%20went%20into%20the%20topping).%20The%20dark%20spots%20in%20the%20picture%20are%20where%20the%20cottage%20cheese%20was%20at%20the%20surface,%20it%20didn't%20taste%20burnt%20at%20all.%3C/p%3E%3Cp%3EI%20had%20these%20around%20lunch%20time,%20and%20they%20all%20disappeared%20or%20I%20would%20have%20saved%20some%20for%20a%20snack.%20They%20are%20hearty%20enough%20for%20that.%20And%20are%20good%20with%20peanut%20butter,%20too.%20The%20cottage%20cheese%20and%20egg%20combination%20puts%20them%20through%20the%20roof%20in%20protein,%20and%20oatmeal%20is%20(obviously)%20a%20whole%20grain.%20To%20make%20it%20any%20more%20nutritious,%20it....%20I%20can't%20think%20of%20anything.%3C/p%3E%3Cp%3EMade%20without%20a%20blonder%20or%20processor,%20bigger%20oatmeal%20chunks%20and%20don't%20stick%20together%20as%20well.%20Still%20tasty!%3C/p%3E){kind=link}
