Oatmeal Lace Cookies & Dining at Vezzo
WOW! We baked A LOT this weekend! Danny’s parents came on Saturday and we went into the city for lunch. We met my mom and Tony and has really good thin pizza at an Italian restaurant around 30th and Lexington called Vezzo. After Danny’s parents left we went into baking mode.
We tackled:
– Chocolate Walnut Biscotti
– Peppermint Bark
– Espresso Brownies

%20and%20I%20attribute%20it%20to%20two%20things%E2%80%A6..1.%20my%20favorite%20appliance%20(My%20cherry%20red%20KitchenAid%20mixer)%20and%20my%20human%20dishwasher/pan%20cleaner/floor%20sweeper.%20If%20you%20have%20those%20two%20things%20you%20are%20golden.%3C/p%3E%3Cp%3EI%20will%20be%20posting%20these%20recipes%20throughout%20the%20week%20because%20it%E2%80%99s%20just%20TOO%20much%20to%20write%20it%20all%20in%20one%20post.%3C/p%3E%3Cp%3EThe%20lace%20cookies%20were%20the%20first%20thing%20we%20made%20because%20I%20hadn%E2%80%99t%20ever%20made%20them%20before.%20They%20were%20definitely%20tricky%20but%20once%20we%20figured%20out%20a%20system%20it%20went%20quick.%20The%20recipe%20we%20used%20said%20to%20use%20parchment%20paper%20so%20they%20would%20come%20off%20easier,%20but%20we%20found%20that%20they%20sticked%20completely%20and%20were%20garbage%20bound.%20After%20trying%20a%20couple%20different%20things%20we%20figured%20out%20that%20a%20greased%20pan%20was%20the%20best%20thing%20for%20the%20thin%20cookies.%3C/p%3E%3Cp%3EOats%20in%20the%20food%20processor%20(not%20instant)%3C/p%3E%3Cp%3EI%20doubled%20the%20recipe%20to%20make%20about%2060%20cookies.%20It%20doesn%E2%80%99t%20seem%20like%20a%20lot%20of%20dough%20but%20you%20only%20use%20about%20a%20quarter%20size%20of%20it%20for%20each%20cookie.%3C/p%3E%3Cp%3EThey%20expand%20so%20much,%20so%20make%20sure%20you%20leave%20about%203%20inches%20between%20each%20cookie.%3C/p%3E%3Cp%3EThey%20are%20done%20when%20they%20brown%20slightly%20around%20the%20edges.%20Let%20them%20cool%20for%20a%20second%20and%20then%20place%20them%20on%20a%20cooling%20rack.%3C/p%3E%3Cp%3EAll%20done!%20They%20are%20so%20cool%20how%20they%20just%20get%20lacy%20in%20the%20center.%3C/p%3E%3Cp%3EINGREDIENTS:For%20the%20cookies:1/2%20cup%20oats,%20chopped%20in%20food%20processor1/4%20cup%20flour1/4%20tsp%20baking%20powder1/2%20cup%20sugar2%20tablespoons%20corn%20syrup6%20tbsp%20melted%20butter%20(until%20the%20foam%20subsides)2%20tablespoons%20heavy%20creamPinch%20of%20salt%3C/p%3E%3Cp%3EFor%20the%20ganache:1/4%20cup%20chocolate%20chips1%20tbsp%20heavy%20cream%3C/p%3E%3Cp%3EDIRECTIONS:In%20a%20food%20processor,%20pulse%20the%20raw%20oats%20several%20times%20until%20they%20become%20small%20pieces.%20While%20that%20is%20going,%20melt%20the%20butter%20in%20a%20small%20saucepan%20or%20in%20the%20microwave.%3C/p%3E%3Cp%3ECombine%20all%20ingredients%20for%20the%20cookies%20in%20a%20large%20bowl%20and%20stir%20to%20combine.%20Spoon%20onto%20baking%20sheets%20by%20the%20teaspoon%20(about%20a%20quarter%20size%20each),%20placing%20each%20cookie%20at%20least%203%E2%80%B3%20apart%20from%20other.%20Bake%20at%20375%20for%206-8%20minutes,%20or%20until%20cookies%20have%20spread%20and%20are%20just%20beginning%20to%20brown%20around%20the%20edges.%20Let%20them%20cool%20completely%20on%20the%20baking%20sheets%20before%20taking%20them%20off%20with%20a%20spatula.%3C/p%3E%3Cp%3EFor%20the%20chocolate%20drizzle,%20melt%20chocolate%20chips%20and%202%20tbsp%20heavy%20cream%20for%2015%20seconds%20in%20the%20microwave%20on%20high%20heat.%20Stir%20to%20combine%20%E2%80%94%20if%20there%20are%20lumps,%20heat%20for%20an%20additional%205%20seconds%20at%20a%20time.%20Spoon%20the%20ganache%20into%20a%20squeeze%20bottle%20and%20use%20it%20to%20drizzle%20chocolate%20onto%20the%20cookies,%20either%20on%20the%20cooled%20baking%20sheets%20or%20on%20a%20wire%20rack.%20Enjoy!%3C/p%3E%3Cp%3EThey%20really%20are%20so%20yummy.%20I%20already%20put%20together%20a%20couple%20of%20my%20holiday%20tins%20filled%20with%20cookies%20for%20my%20aunt%20and%20my%20grandma%20and%20some%20of%20their%20neighbors.%20Hopefully%20everyone%20will%20enjoy%20them!%3C/p%3E%3Cp%3EWe%20have%20also%20started%20Rainbow%20(Venetian)%20cookies.%20They%20are%20currently%20in%20the%20refrigerator%20with%20a%20huge%20wooden%20cutting%20board%20on%20top%20to%20weigh%20them%20down.%20I%E2%80%99ll%20be%20posting%20that%20recipe%20when%20they%20are%20complete.%3C/p%3E%3Cp%3EHappy%20Monday!%208%20school%20days%20till%20Christmas%20Break!!%3C/p%3E%3Cp%3EBlissful%20Bites%20Podcast%20Giveaway!%3C/p%3E%3Cp%3EJoin%20the%20Blissful%20Bites%20team%20and%20stay%20up%20to%20date%20with%20interviews,%20business%20tips%20AND%20be%20entered%20to%20win%20this%20month's%20prize%20pack!%3C/p%3E){kind=link}
