Oatmeal Raisin Snack Bites

So y’all already know that my brain has become consumed with recipes & meals & snacks that are lunchbox friendly. Fixing meals for school is such an adjustment! I feel like I’m constantly sending the same things over & over so I’m always happy to find new recipes to make & send.
One of our favorite little snacking options is California Raisins. She loves the little boxes that fit perfectly in her hands & I love that they are an all-natural, dried-by-the-sun fruit that comes by their sweetness naturally!
These Oatmeal Raisin Snack Bites are the perfect after school snack for the kiddo or even a snack bite to go in her lunch instead of a sandwich. Packed full of California Raisins with some honey added, there was no need for any extra sugar to give these bites their sweetness. And the protein will help get them through that afternoon ‘I don’t want to do homework’ slump!
{don’t yell at me if they still don’t want to actually do their homework! they are good snacks but not miracle workers! ;)}
Oatmeal Raisin Snack Bites
Ingredients
- 3/4 cup creamy peanut butter
- 1/2 cup honey
- 1 & 1/2 cups oats - I used quick cook
- 1/2 cup California Raisins
pinch of saltInstructions
Pour the peanut butter & honey into a medium microwave safe bowl. Microwave for 20 seconds to soften. Add the oats, raisins & pinch of salt and stir until thoroughly mixed. Let the mixture chill in the refrigerator for about 30 minutes.
Roll into 1-inch sized balls and place on wax or parchment paper.
Store in an airtight container in the fridge.
