.%20But,%20hopefully%20I'll%20get%20into%20a%20good%20routine%20soon.%3C/p%3E%3Cp%3EIn%20regards%20to%20work,%20all%20I%20have%20to%20say%20is%20that%20I'm%20very%20glad%20I%20have%20the%20co-workers%20I%20do.%20Although%20the%20work%20is%20extremely%20exhausting%20and%20frustrating%20at%20times%20(seeing%20as%20how%20none%20of%20us%20get%20decent%20breaks%20and%20it's%20always%20go-go-go)%20my%20team%20at%20work%20is%20just%20amazingly%20supportive%20and%20they%20always%20offer%20a%20hand%20(even%20when%20they're%20swamped%20too).%20Without%20them,%20I'd%20seriously%20have%20a%20complete%20melt-down...%20and%20came%20so%20close%20to%20it,%20let%20me%20tell%20you.%20But%20for%20now,%20I'm%20good...%20enjoying%20my%20restful%20days%20off%20and%20finally%20stepping%20into%20the%20kitchen%20to%20do%20some%20Daring%20Baker's%20work.%3C/p%3E%3Cp%3EBlog-checking%20lines:%20The%20October%202010%20Daring%20Bakers%20challenge%20was%20hosted%20by%20Lori%20of%20Butter%20Me%20Up.%20Lori%20chose%20to%20challenge%20DBers%20to%20make%20doughnuts.%20She%20used%20several%20sources%20for%20her%20recipes%20including%20Alton%20Brown,%20Nancy%20Silverton,%20Kate%20Neumann%20and%20Epicurious.%3C/p%3E%3Cp%3EBoy%20do%20I%20love%20doughnuts...%20and%20I%20could%20hardly%20wait%20to%20get%20cracking%20on%20this%20challenge,%20so%20without%20further%20adieu.%20Here's%20the%20recipe:%3C/p%3E%3Cp%3EYeast%20Doughnuts%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod:%20%20Place%20the%20milk%20in%20a%20medium%20saucepan%20and%20heat%20over%20medium%20heat%20just%20until%20warm%20enough%20to%20melt%20the%20shortening.%20(Make%20sure%20the%20shortening%20is%20melted%20so%20that%20it%20incorporates%20well%20into%20the%20batter.)%3C/p%3E%3Cp%3EPlace%20the%20shortening%20in%20a%20bowl%20and%20pour%20warmed%20milk%20over.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20sprinkle%20the%20yeast%20over%20the%20warm%20water%20and%20let%20dissolve%20for%205%20minutes.%20It%20should%20get%20foamy.%20After%205%20minutes,%20pour%20the%20yeast%20mixture%20into%20the%20large%20bowl%20of%20a%20stand%20mixer%20and%20add%20the%20milk%20and%20shortening%20mixture,%20first%20making%20sure%20the%20milk%20and%20shortening%20mixture%20has%20cooled%20to%20lukewarm.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20sugar,%20salt,%20nutmeg,%20and%20half%20of%20the%20flour.%20Using%20the%20paddle%20attachment%20of%20your%20mixer%20(if%20you%20have%20one),%20combine%20the%20ingredients%20on%20low%20speed%20until%20flour%20is%20incorporated%20and%20then%20turn%20the%20speed%20up%20to%20medium%20and%20beat%20until%20well%20combined.%3C/p%3E%3Cp%3EAdd%20the%20remaining%20flour,%20combining%20on%20low%20speed%20at%20first,%20and%20then%20increase%20the%20speed%20to%20medium%20and%20beat%20well.%3C/p%3E%3Cp%3EChange%20to%20the%20dough%20hook%20attachment%20of%20the%20mixer%20and%20beat%20on%20medium%20speed%20until%20the%20dough%20pulls%20away%20from%20the%20bowl%20and%20becomes%20smooth,%20approximately%203%20to%204%20minutes%20(for%20me%20this%20only%20took%20about%20two%20minutes).%20If%20you%20do%20not%20have%20a%20dough%20hook/stand%20mixer%20%E2%80%93%20knead%20until%20the%20dough%20is%20smooth%20and%20not%20sticky.%3C/p%3E%3Cp%3ETransfer%20to%20a%20well-oiled%20bowl,%20cover,%20and%20let%20rise%20for%201%20hour%20or%20until%20doubled%20in%20size.%3C/p%3E%3Cp%3EOn%20a%20well-floured%20surface,%20roll%20out%20dough%20to%203/8-inch%20(9%20mm)thick.%20(Make%20sure%20the%20surface%20really%20is%20well-floured%20otherwise%20your%20doughnuts%20will%20stick%20to%20the%20counter).%3C/p%3E%3Cp%3ECut%20out%20dough%20using%20a%202%201/2-inch%20(65%20mm)%20doughnut%20cutter%20or%20pastry%20ring%20or%20drinking%20glass%20and%20using%20a%207/8-inch%20(22%20mm)%20ring%20for%20the%20center%20whole.%20Set%20on%20floured%20baking%20sheet,%20cover%20lightly%20with%20a%20tea%20towel,%20and%20let%20rise%20for%2030%20minutes.%3C/p%3E%3Cp%3EPreheat%20the%20oil%20in%20a%20deep%20fryer%20or%20Dutch%20oven%20to%20365%20%C2%B0F/185%C2%B0C.%3C/p%3E%3Cp%3EGently%20place%20the%20doughnuts%20into%20the%20oil,%203%20to%204%20at%20a%20time.%20Cook%20for%201%20minute%20per%20side%20or%20until%20golden%20brown%20(my%20doughnuts%20only%20took%20about%2030%20seconds%20on%20each%20side%20at%20this%20temperature).%3C/p%3E%3Cp%3ETransfer%20to%20a%20cooling%20rack%20placed%20in%20baking%20pan.%20Allow%20to%20cool%20for%2015%20to%2020%20minutes%20prior%20to%20glazing,%20if%20desired.%3C/p%3E%3Cp%3E[NOTE:%20I%20halved%20my%20portion%20of%20dough%20so%20that%20I%20could%20fry%20one%20half,%20and%20save%20the%20other%20half%20of%20dough%20to%20shape%20and%20bake.%20For%20my%20baked%20donuts,%20I%20placed%20them%20on%20a%20well%20greased%20baking%20tray,%20brushed%20the%20uncooked%20donuts%20with%20melted%20butter%20and%20baked%20at%20350degrees%20for%208-10minutes.%20Once%20baked,%20I%20then%20brushed%20them%20with%20a%20little%20more%20butter%20and%20dipped%20them%20into%20a%20mixture%20of%20granulated%20sugar%20+%20cinnamon.%20For%20my%20filled%20donuts,%20I%20simply%20poked%20a%20hole%20in%20the%20middle%20and%20filled%20with%20raspberry%20preserve]%3C/p%3E%3Cp%3EYay,%20for%20DB%20challenges!%20These%20doughnuts%20were%20simply%20divine!%20Both%20the%20baked%20and%20the%20fried%20versions%20were%20super%20tasty%20and%20they%20actually%20weren't%20that%20difficult%20to%20make.%20There%20are%20times%20when%20I%20look%20at%20the%20DB%20challenges%20and%20think%20%22OMG!%20I%20don't%20have%20any%20time%20to%20complete%20this%20challenge%22,%20but%20then%20when%20I%20look%20back%20on%20it%20again,%20it's%20actually%20a%20good%20thing%20that%20these%20challenges%20are%20monthly%20because%20then%20I'm%20almost%20guaranteed%20to%20enter%20at%20least%20a%20blog-post%20a%20month!%20So%20thanks%20DB's%20for%20keeping%20me%20on%20track!%3C/p%3E){kind=link}
