Octopus in a mustard sauce

a recipe from the Aegean islands. It is a starter "meze".

Ingredientes

  • 200 gr octopus boiled
  • 1 garlic clove
  • 1 green pepper
  • 1 red pepper
  • 1 chili pepper
  • juice of 1 lemon
  • 1 glass of white wine
  • oregano
  • parsley
  • olive oil
  • mustard

Direcciones

  1. we boil the octopus (without adding any water since the octopus will extract its own).
  2. we cut the peppers and the garlic.
  3. in a heavy pan we sauté the garlic and the peppers in olive oil. then we add the octopus.
  4. when the octopus takes a nice colour we add the wine and the lemon juice.
  5. finally we add the mustard and we low the heat till the sauce becomes thicker.
  6. Before serving we powder with finely chopped parsley and oregano.
