My son and I are on a Clementine kick. You've never had them? To be honest, neither had we, until this season. Where we live, the brand Cuties are easily spotted at our local grocery store and at Costco.They're a blend of two kinds of mandarins: Clementine and Murcott. I keep them in my purse, for a quick snack that satisfies my craving for sweets. They peel so easily!I buy them in 3 pound and 5 pound bags, and they disappear really fast! %20posted%20her%20recipe%20of%20a%20Clementine%20Olive%20Oil%20cake%20in%20early%20March.%20%20I%20remembered%20it,%20as%20I%20was%20enjoying%20a%20juice%20%22Cutie%22%20and%20pondering%20what%20I%20could%20make%20with%20some%20of%20them.%20%20This%20cake%20is%20super%20easy%20to%20make:First,%20I%20zested%20the%20four%20of%20the%20clementines,%20and%20then%20peeled%20them.%20(The%20zest%20will%20be%20added%20to%20the%20batter.)%20In%20a%20food%20processor,%20I%20whizzed%20the%20peeled%20fruit%20to%20make%20about%20%E2%85%94%20cup%20of%20fresh%20pulpy%20juice.%20%20You'll%20need%20flour,%20baking%20soda,%20baking%20powder%20and%20salt.%20Just%20whisk%20those%20together.%20%20You%20also%20need%202%20eggs,%20room%20temperature.%20Next..%20Instead%20of%20butter,%20we're%20using%20olive%20oil--%20NOT%20vegetable%20oil,%20or%20canola%20oil...%20I'm%20using%20Extra-Virgin%20Olive%20Oil.%20%20I%20have%20expensive%20stuff,%20but%20that's%20more%20of%20a%20finishing%20oil.%20%20I%20buy%20my%20EVOO%20at%20Trader%20Joe's...it's%20a%20staple%20in%20my%20pantry.%20%20You%20only%20need%203/4%20of%20a%20cup,%20which%20is%20added%20with%20the%20eggs%20and%20sugar%20until%20it's%20well%20blended%20and%20light.%3C/p%3E%3Cp%3ENext,%20you%20add%20the%20pulpy%20juice...then%20the%20dry%20ingredients...and%20the%20batter%20is%20done.%20Quick!Parchment%20paper%20is%20a%20good%20thing%20to%20use,%20but%20I%20use%20Baker's%20Joy.%20%20Stacey%20says%20to%20bake%20it%20at%20375F%20for%2050-55%20minutes,%20but%20I%20always%20set%20the%20timer%20for%2010-15%20%20minutes%20less%20when%20I%20am%20trying%20a%20new%20recipe.%20It's%20a%20good%20thing%20that%20I%20did,%20because%20the%20loaf%20was%20finished%20at%2040%20minutes!%20%20NOTE:%20You%20could%20easily%20turn%20these%20into%20muffins.I%20let%20the%20baked%20loaf%20cool%20for%2020%20minutes,%20and%20then%20put%20it%20on%20a%20cooling%20rack.%20%20Stace%20says%20to%20wait%20a%20day%20to%20taste%20the%20cake,%20because%20it%20tastes%20even%20better.%20Uh-huh.It%20is%20my%20duty%20to%20slice%20the%20cake,%20once%20it%20cooled%20down--%20purely%20for%20quality%20control%20purposes.%20I'm%20liking%20those%20bits%20of%20Clementine%20pulp,%20Stacey!%3C/p%3E%3Cp%3EVERDICT:%20%20The%20cake%20was%20moist,%20and%20slightly%20dense.%20%20It's%20not%20too%20sweet%20--%20so,%20if%20you%20have%20a%20sweet%20tooth%20for%20traditional%20American%20Cakes...%20you%20might%20be%20disappointed.%20%20I%20felt%20the%20taste%20of%20the%20Clementine%20was%20very%20subtle...%20I%20almost%20wanted%20more%20of%20it%20to%20come%20through.%20%20My%20husband%20didn't%20like%20the%20cake%20that%20much--%20he%20ate%20two%20slices%20and%20that%20was%20it..%20%20I%20think%20he%20just%20couldn't%20fathom%20the%20idea%20of%20olive%20oil,%20instead%20of%20butter.%20I%20shouldn't%20have%20told%20him,%20in%20advance!%20%20Me?%20%20I%20was%20raised%20by%20a%20German%20mom,%20so%20I%20like%20cakes%20that%20aren't%20super%20sweet%20with%20a%20lot%20of%20frosting.%20I%20liked%20the%20cake,%20and%20I%20ate%20a%20slice%20or%20two%20each%20morning%20with%20my%20coffee.%20%20%20%20I%20bet%20that%20if%20I%20made%20a%20glaze%20for%20this,%20with%20some%20tangy%20lemon%20juice,%20that%20he%20would%20like%20the%20cake%20better.%20Oh,%20I'd%20also%20have%20to%20fool%20him%20by%20calling%20it%20Clementine%20Butter%20Cake.%20%20I%20am%20linking%20this%20recipe%20to%20the%20Saturday%20Blog%20Showcase,%20hosted%20by%20Lori%20at%20%22All%20%20That%20Splatters%22%20and%20Ann%20at%20%22Thibeault's%20Table%22.%20%20%20It's%20a%20great%20way%20to%20give%20a%20shout%20out%20to%20fellow%20bloggers%20and%20a%20fun%20way%20to%20discover%20new%20food%20blogs.%20%20I%20would%20love%20to%20have%20more%20of%20you%20participate,%20so%20please%20link%20a%20recipe%20you've%20recently%20made%20from%20a%20fellow%20Food%20Blogger.%20Thanks%20Stacey!%3C/p%3E%3Cp%3EI%20hope%20you%20find%20Clementines,%20before%20the%20season%20is%20over!%3C/p%3E){kind=link}
