,%20I%20got%20really%20interested.%3C/p%3E%3Cp%3EI%20bookmarked%20a%20few%20recipes%20and%20one%20of%20the%20first%20few%20I%20tried%20is%20this%20Chocolate%20Chiffon%20cake.%20The%20ingredients%20list%20is%20typical%20of%20a%20basic%20chiffon%20cake%20recipe,%20the%20only%20difference%20is,%20there%20is%20no%20oil%20in%20the%20list.%20There%20are%20no%20other%20special%20ingredients%20other%20than%20the%20usual%20eggs,%20sugar,%20flour%20and%20liquid.%3C/p%3E%3Cp%3EWhenever%20I%20make%20a%20chiffon%20cake,%20I%20would%20usually%20prepare%20the%20egg%20yolk%20batter%20first%20using%20a%20manual%20balloon%20whisk%20before%20beating%20the%20egg%20whites%20with%20an%20electric%20handheld%20mixer.%20The%20instructions%20for%20this%20recipe%20however%20differ%20from%20my%20usual%20method%20as%20is%20it%20necessary%20to%20use%20the%20electric%20mixer%20to%20beat%20the%20egg%20yolks.%20Without%20having%20to%20wash%20the%20whisks/beaters%20of%20the%20mixer,%20the%20egg%20whites%20are%20first%20beaten%20before%20preparing%20the%20yolk%20batter.%20Hence,%20it%20is%20important%20to%20get%20ready%20the%20necessary%20ingredients%20so%20that%20the%20yolk%20batter%20can%20be%20prepared%20quickly,%20otherwise,%20the%20beaten%20egg%20whites%20may%20probably%20deflate%20if%20left%20aside%20for%20too%20long.%3C/p%3E%3Cp%3EOther%20than%20the%20sequence,%20the%20rest%20is%20quite%20straight%20forward.%20Yet,%20I%20made%20a%20hiccup%20while%20preparing%20the%20egg%20whites.%20I%20over%20beat%20the%20whites,%20just%20slightly,%20but%20it%20still%20affected%20the%20finished%20product!%20What%20a%20major%20no%20no,%20and%20really%20unforgivable%20for%20someone%20who%20bakes%20chiffon%20cakes%20so%20regularly.%20I%20learned%20not%20to%20take%20things%20too%20easy%20or%20for%20granted,%20even%20if%20I%20am%20very%20familiar%20with%20the%20process.%3C/p%3E%3Cp%3ESince%20I%20over%20beat%20the%20egg%20whites,%20I%20deflated%20the%20batter%20while%20folding%20the%20whites%20to%20the%20yolk%20batter.%20The%20finished%20batter%20was%20still%20thick%20but%20it%20could%20only%20fill%20up%20the%20pan%20to%20just%203/4%20full.%20The%20cake%20didn't%20turn%20out%20as%20tall%20but%20fortunately,%20the%20texture%20was%20not%20really%20affected.%20Even%20without%20the%20use%20of%20any%20oil,%20the%20cake%20was%20still%20moist,%20soft%20and%20fluffy.%20If%20someone%20were%20to%20give%20me%20this%20cake%20to%20try,%20I%20would%20never%20be%20able%20to%20detect%20that%20it%20was%20made%20without%20oil.%20The%20only%20tell%20tale%20sign%20is%20that%20there%20wasn't%20any%20oil%20stain%20on%20the%20doily%20paper%20which%20I%20used%20to%20line%20the%20cake.%20Another%20thing%20I%20noticed%20is,%20the%20cake%20was%20a%20little%20more%20difficult%20to%20unmold,%20or%20is%20it%20just%20me?%3C/p%3E%3Cp%3EThe%20book%20states%20that%201/8%20of%20this%2017cm%20cake%20has%20got%20113%20kcal%20compared%20to%20180%20kcal%20for%20a%20similar%20chocolate%20chiffon%20made%20with%20oil,%20lower%20calories%20without%20compromising%20on%20the%20taste%20and%20texture.%20I%20used%20valrhona%20cocoa%20powder%20which%20lends%20the%20cake%20a%20richer%20and%20intense%20cocoa%20flavour.%20The%20cocoa%20powder%20also%20gives%20the%20cake%20a%20deep%20mahogany%20color.%20The%20pictures%20I%20took%20show%20a%20lighter%20shade%20as%20I%20had%20to%20adjust%20the%20brightness%20and%20contrast%20as%20the%20original%20images%20were%20too%20dark.%20I%20also%20took%20the%20liberty%20to%20add%20in%20some%20rum%20besides%20the%20pure%20vanilla%20extract.%20This%20recipe%20is%20a%20keeper%20and%20it%20will%20be%20my%20go-to%20chocolate%20chiffon%20cake%20from%20now%20on.%3C/p%3E%3Cp%3EOil%20free%20Chocolate%20Chiffon%20Cake%20(%E6%97%A0%E6%B2%B9%E5%B7%A7%E5%85%8B%E5%8A%9B%E6%88%9A%E9%A3%8E%E8%9B%8B%E7%B3%95)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%20one%2017cm%20cake)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ESieve%20flour%20and%20cocoa%20powder,%20set%20aside.%3C/p%3E%3Cp%3EGet%20ready%20all%20other%20ingredients.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20180%20degC.%3C/p%3E%3Cp%3EIn%20a%20clean,%20dry%20mixing%20bowl,%20beat%20egg%20whites%20with%20an%20electric%20handheld%20mixer%20on%20low%20speed%20until%20mixture%20becomes%20frothy%20and%20foamy.%20Add%20half%20of%20the%20sugar%20and%20turn%20to%20high%20speed%20and%20beat%20the%20mixture.%20Continue%20to%20add%20in%20the%20remaining%20sugar%20mixture%20and%20beat%20until%20the%20egg%20whites%20reaches%20the%20soft%20peak%20stage.%20The%20soft%20peak%20stage%20is%20reached%20when%20the%20peaks%20of%20the%20whites%20curl%20over%20and%20droop%20slightly.%20The%20egg%20whites%20should%20appear%20smooth%20and%20glossy.%20Set%20aside.%20(Do%20not%20over%20beat%20the%20whites%20still%20stiff,%20it%20is%20better%20to%20beat%20the%20whites%20still%20soft%20peaks%20for%20easy%20folding%20with%20the%20yolk%20batter.)%3C/p%3E%3Cp%3EPlace%20egg%20yolks%20and%20sugar%20in%20another%20mixing%20bowl.%20With%20the%20electric%20handheld%20mixer%20(Note
