Ingredientes

  • 1 1/2 c. cleaned and slice okra
  • 1 x (about 3/4 lb.)
  • 1 1/2 c. cooked rice
  • 1 c. minced tomato
  • 3/4 c. minced onion
  • 1 Tbsp. sugar
  • 1 1/2 tsp salt
  • 1 tsp baking pwdr
  • 3/4 tsp pepper
  • 2 x Large eggs, beaten
  • 1 c. cornmeal
  • 1 c. all-purpose flour
  • 1 x vegetable oil

Direcciones

  1. Chop okra slices. Combine minced okra, rice, tomato, onion, sugar, salt, baking pwdr, and pepper. Stir in beaten Large eggs. Add in cornmeal and flour, mixing well.
  2. Drop mix by tablespoonfuls into deep warm oil (375F.). Cook one minute or possibly till golden, turning as necessary. Drain on paper towels. Serve warm.
  3. SERVING SUGGESTIONS: Okra Croquettes may be served with Dill Sauce, Horseradish Sauce, Mustard Dip Sauce, or possibly any lowfat sour cream sauce.
  4. Vegetables
