OKRA WITH ONIONS

A simple stir fry with okras and onions. The sweetness of onions and the taste of the okra's makes this dish delicious. This goes very well with rice or roti .

Preparation

Heat oil in a pan, add the sliced okra's and allow to cook on medium heat,stirring frequently to keep them from sticking.It changes from being slimy to quite firm. Remove from pan and keep it aside.

Heat oil in a heavy saucepan , add mustard seeds, when it stops spluttering add urad dal and curry leaves, saute for a min. Now add the sliced onions and fry until they turn translucent.

Add the okra's along with sambar powder, salt and mix it gently.

Allow it to cook for about 10 mins. and remove from heat.

Okra with onions is ready to be served.....

Serve this delicious fry with rice or roti and enjoy :)

Note:

When buying okra's make sure to choose bright green ones. Fresh okra's will snap when bent.
