- Saute/fry the onion in butter till soft, about 5 min. Add in the flour, salt, pepper, and nutmeg and stir till blended and bubbly. Remove from heat and gradually stir in the chicken stock and lowfat milk. Return to heat, bring to a boil, and cook, stirring, till thickened. Add in the squash and Worcestershire, reduce heat to low, and cook, stirring often, till heated through. Blend together the egg yolk and cream; stir in some of the warm soup, then stir the egg mix back into the warm soup. Cook till soup is heated through and the egg has thickened.
