February freezer appetizers!

One of the best time saving tips I have is to make-ahead and freeze. From appetizers , main dishes, to desserts – many things can be prepared on your own time, frozen, and is ready to pull out when you do not have time to cook. So whether you are making a meal for a crowd or for you and your sweetheart, make it easy on yourself and make it all ahead of time!

Try these little savory Olive Cheese Cocktail Bread from my Too Hot in the Kitchen cookbook. So easy! Simply mix the ingredients, spread on bread, and flash freeze on baking sheet, place in a resealable freezer bag. I keep them in the freezer to pull out when my husband invites a last minute crowd over to watch a sporting event on TV! Remember to look for the snowflake symbol in all my cookbooks that indicate freezer-friendly recipes.

Using the proper freezing techniques, can really make a difference in the flavor and texture of the finished dish. Check out these important facts and tips for successful freezing:

Food must be at room temperature before freezing.

Do not put a cold glass or ceramic dish in a hot oven as the dish may possibly break.

When the power goes out, if your freezer is unopened it's full and well insulated. Foods will stay frozen from around two to four days.

Using proper plastic freezer containers or freezer plastic zip top bags is very important to avoid freezer burn and prolong freezer shelf life. Freezer storage containers and wraps must be moisture proof and airtight.

Allow room for food to expand as the food freezes.

Olive Cheese Cocktail Bread

Freeze and please appetizers. Distinct flavors meld together for this outstanding party pick-up. Make ahead of time to pull out when desired. Raid an olive bar for good quality Kalamata olives…it makes a difference!

Ingredients

1 bunch green onions, finely chopped

1/3 cup chopped Kalamata olives

1 (4-ounce) can chopped green chiles

1 (8-ounce) package shredded reduced fat sharp Cheddar cheese

2 tablespoons olive oil

1 loaf cocktail rye bread or sourdough bread

Directions

In bowl, mix together all the ingredients except the bread. Spread on top bread slices.

Freeze flat on baking sheet few hours, then place in resealable freezable bags.

Preheat oven 350̊° F. Bake 10-12 minutes, just until corners of bread start to turn brown.

If cooking immediately (not frozen) bake 8-10 minutes.

Prep Time: 30 Minutes

Cook Time: 12 Minutes

Total Time: 42 Minutes

Servings: Makes 48-50 miniature breads
