%20over.%3C/p%3E%3Cp%3ENow%20that%20I%E2%80%99m%20prepared%20to%20discuss,%20in%20some%20measure,%20the%20African%20Diaspora,%20women%E2%80%99s%20conduct%20literature,%20and%20how%20our%20Renaissance%20predecessors%20theorized%20on%20the%20ending%20ends%20of%20earthly%20learning,%20I%E2%80%99m%20prepared%20to%20start%20cooking;%20and%20more%20importantly,%20I%E2%80%99m%20prepared%20to%20start%20telling%20you%20all%20about%20it%20all%20over%20again.%3C/p%3E%3Cp%3EThe%20end%20of%20finals%20means,%20of%20course,%20the%20end%20of%20a%20semester,%20the%20end%20of%20deep,%20from-the-core%20sighs,%20and%20last%20minute%20cramming.%20It%20brings%20the%20(exciting!)%20prospect%20of%20one%20more%20semester%20to%20get%20through%20until%20they%20release%20me,%20adult-style,%20into%20the%20real%20world%20for%20good.%20Consequently,%20it%20also%20means%20the%20good%20old%20Christmas%20scramble:%20five%20days%20(and%20counting!)%20until%20the%20big%20day,%20for%20which%20I%20am%20totally%20and%20utterly%20unprepared.%20But,%20much%20like%20studying%20for%20college%20finals,%20I%20work%20best%20under%20pressure.%20Others%20may%20squirm%20and%20fret%20and%20pour%20themselves%20into%20flashcard-making,%20but%20I%E2%80%99m%20all%20about%20it.%20Give%20me%20a%20baking%20sheet,%20some%20canning%20jars,%20and%20perhaps%20a%20few%20rush%20deliveries%20from%20amazon.com,%20and%20I%E2%80%99m%20good%20to%20go.%3C/p%3E%3Cp%3EAnd,%20in%20the%20spirit%20of%20the%20season,%20we%20were%20just%20given%20a%20ten-inch%20dusting%20of%20fluffy%20white%20powder.%20If%20that%20doesn%E2%80%99t%20make%20you%20want%20to%20throw%20on%20the%20oven%20for%20some%20holiday%20baking,%20string%20some%20lights,%20and%20dance%20around%20the%20kitchen%20to%20Mannheim%20Steamroller*,%20well,%20then,%20you%20should%20stop%20being%20Scrooge.%3C/p%3E%3Cp%3EAlthough%20I%20can%E2%80%99t%20tell%20you%20what%20I%E2%80%99m%20making%20for%20Christmas%20just%20yet%20(my%20present%20list%20may%20or%20may%20not%20include%20all%20of%20my%20readers%E2%80%A6),%20I%20do%20have%20some%20recipes%20stashed%20away%20that%20I%E2%80%99ve%20been%20meaning%20to%20share.%20So,%20without%20any%20better%20segue%20than%20-%20make%20this,%20it%E2%80%99s%20down-to-your-bones%20good,%20I%20introduce%20a%20potato%20gratin:%20made%20rich%20with%20mascarpone,%20and%20earthy%20with%20porcini%20mushrooms%20hidden%20into%20its%20layers.%20It%20made%20a%20fancy%20appearance%20on%20our%20Thanksgiving%20table%20this%20year,%20and%20I%20would%20be%20doing%20everyone%20a%20disservice%20to%20keep%20the%20recipe%20all%20to%20myself.%20Once%20you%E2%80%99ve%20made%20it,%20and%20I%E2%80%99ve%20sufficiently%20unearthed%20our%20cars%20from%20their%20heavy,%20winter%20blankets%20of%20snow,%20meet%20me%20back%20here:%20I%20have%20all%20sorts%20of%20tarts,%20and%20braised%20lambs,%20and%20pumpkin%20bread%20puddings%20up%20my%20sleeve.%3C/p%3E%3Cp%3E*Oh,%20yeah.%20When%20I%20wrote%20that%20I%20was%20specifically%20channeling%20their%20synth-y%20rendition%20of%20%E2%80%9CDeck%20the%20Halls,%E2%80%9D%20but%20any%20equally%20cringe-worthy%20music%20would%20do%20the%20trick.%3C/p%3E%3Cp%3EPotato%20Gratin%20with%20Mascarpone%20and%20Porcini%20Mushrooms%3C/p%3E%3Cp%3E(Adapted%20from%20Bon%20Appetit)%3C/p%3E%3Cp%3EI%E2%80%99ve%20made%20this%20twice%20now;%20the%20first%20time,%20the%20potato%20layers%20didn%E2%80%99t%20quite%20cook%20through,%20even%20with%20an%20extra%20half%20hour%20added%20to%20the%20baking%20time.%20This%20most%20recent%20time%20I%20quickly%20blanched%20the%20sliced%20potatoes%20before%20assembly,%20and%20that%20seemed%20to%20work.%20Unless%20you%20want%20yours%20with%20a%20weird%20kind%20of%20crunch,%20or%20you%20want%20to%20wait%20forever%20and%20a%20day%20for%20it%20to%20bake,%20that%E2%80%99s%20what%20I%20recommend%20doing.%3C/p%3E%3Cp%3EPour%20boiling%20water%20over%20dried%20mushrooms%20and%20let%20them%20soak%20for%20about%2020%20minutes%20in%20order%20to%20re-hydrate.%20Drain%20and%20roughly%20chop.%3C/p%3E%3Cp%3EMelt%20butter%20with%20oil%20in%20medium%20skillet%20over%20medium%20heat.%20Add%20mushrooms%20and%20saut%C3%A9%20until%20beginning%20to%20brown,%20about%203%20minutes.%20Sprinkle%20with%20salt%20and%20pepper.%20Remove%20from%20heat.%20Whisk%201/4%20cup%20Parmesan%20and%20next%204%20ingredients%20in%20small%20bowl;%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EWith%20the%20mushrooms%20and%20the%20cheese%20mixture%20prepared,%20blanch%20potato%20slices%20in%20a%20deep%20pot%20of%20boiling%20water%20for%20a%20few%20minutes,%20or%20until%20their%20just%20slightly%20more%20yielding%20than%20before.%20(You%20don%E2%80%99t%20have%20to%20cook%20them%20completely,%20just%20get%20their%20cooking%20started%20a%20bit.)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%C2%B0F.%20Butter%20wide%20shallow%202-quart%20baking%20dish.%20Arrange%201/4%20of%20potato%20slices%20in%20bottom%20of%20dish.%20Sprinkle%20lightly%20with%20salt%20and%20pepper.%20Scatter%201/4%20of%20mushrooms%20over.%20Repeat.%20Spread%20half%20of%20cheese%20mixture%20over,%20shaking%20dish%20to%20settle.%20(It%20helps%20to%20heat%20the%20cheese%20mixture%20slightly.)%20Repeat%20this%20process%20until%20all%20ingredients%20are%20used%20up.%20Sprinkle%202%20tablespoons%20Parmesan%20over.%20Place%20gratin%20dish%20on%20rimmed%20baking%20sheet.%3C/p%3E%3Cp%3EBake%20gratin%20until%20top%20is%20brown%20and%20sauce%20is%20bubbling%20at%20edges,%20about%201%20hour%2015%20minutes.%20Let%20gratin%20rest%20for%20a%20few%20minutes,%20and%20serve%20warm.%3C/p%3E){kind=link}
