%20Meatball%20SlidersMeatballs.%20Basically%20my%20Husband's%20Holy%20Grail%20food.%20And%20for%207%20years%20(7%20looooong%20years)%20I've%20been%20searching.%20Turning%20over%20every%20rock,%20peeking%20into%20every%20Italian%20kitchen,%20and%20trying%20over%20and%20over%20and%20over%20again.%3C/p%3E%3Cp%3EToo%20tough.%3C/p%3E%3Cp%3ENot%20enough%20breadcrumbs.%3C/p%3E%3Cp%3ENot%20tender%20enough.%3C/p%3E%3Cp%3EToo%20meaty.%3C/p%3E%3Cp%3EToo%20bready.%3C/p%3E%3Cp%3EIt%20seemed%20a%20hopeless%20battle.%3C/p%3E%3Cp%3EBut%20I%20was%20determined%20to%20keep%20trying.%3C/p%3E%3Cp%3EThis%20past%20Sunday%20I%20made%20a%20meatball%20that%20surpassed%20all%20prior%20attempts...a%20meatball%20to%20which%20my%20Husband%20has%20bestowed%20the%20ULTIMATE%20honor.%20%22Better%20than%20my%20Mom's%22.%3C/p%3E%3Cp%3EThank%20you,%20thank%20you,%20thank%20you.%20Finally.%3C/p%3E%3Cp%3EIt%20is%20a%20prep%20you%20probably%20haven't%20seen/used%20before-but%20it's%20what%20worked%20for%20me.%3C/p%3E%3Cp%3EMeatballs%20(adapted%20from%20Jfolse)%3C/p%3E%3Cp%3ERun%20torn%20slices%20of%20bread%20through%20the%20food%20processor%20and%20add%20to%20large%20mixing%20bowl.%3C/p%3E%3Cp%3EAdd%20ground%20beef,%20pork,%20and%20eggs%3C/p%3E%3Cp%3ERun%20onion,%20celery,%20and%20basil%20through%20food%20processor%20%20until%20very%20finely%20chopped%20and%20blended-add%20to%20big%20bowl%20of%20stuff%3C/p%3E%3Cp%3EAdd%20garlic,%20pepper,%20and%20parm-%3C/p%3E%3Cp%3EMix%20by%20hand.%20-Do%20not%20overwork!%3C/p%3E%3Cp%3EAt%20this%20point%20my%20mix%20was%20still%20very%20wet%20and%20wouldn't%20really%20hold%20together-so%20I%20added%20panko%20until%20I%20got%20a%20ball%20that%20would%20hold%20together%20but%20not%20one%20that%20was%20dry.%3C/p%3E%3Cp%3EPlace%20meatballs%20onto%20cookiesheet-I%20rolled%20mine%20just%20larger%20than%20a%20golf%20ball%20and%20got%2031.%3C/p%3E%3Cp%3EBake%20at%20350%20for%2020%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20oven,%20and%20raise%20temp%20to%20400.%3C/p%3E%3Cp%3EBake%20at%20400%20for%2020%20minutes.%3C/p%3E%3Cp%3ERemove.%3C/p%3E%3Cp%3EAt%20this%20point%20they%20are%20cooked%20through.%20You%20can%20do%20whatever%20you'd%20like%20with%20them.%3C/p%3E%3Cp%3EI%20had%20a%20pot%20of%20sauce%20simmering,%20so%20I%20added%20mine%20into%20the%20sauce.%3C/p%3E%3Cp%3EThe%20basil%20and%20celery%20are%20really%20key%20ingredients%20here.%20They%20add%20a%20nice%20herby%20backtone%20to%20the%20meatballs.%20These%20set%20a%20new%20standard%20in%20my%20house.%20They%20are%20tender,%20but%20they%20hold%20their%20shape.%20They%20have%20flavor-so%20they%20don't%20HAVE%20to%20be%20drenched%20in%20sauce...we%20ate%20a%20couple%20before%20adding%20them%20to%20the%20sauce%20and%20they%20were%20just%20as%20awesome.%3C/p%3E%3Cp%3EAnd%20since%20this%20recipe%20makes%20such%20a%20large%20amount,%20I%20was%20able%20to%20stretch%20it%20for%20two%20meals..and%20give%20the%20pooches%20the%20leftovers!%3C/p%3E){kind=link}
