Who is ready for some One Bowl Pumpkin Beer Bread! The original recipe is Pumpkin Apple Cider Bread, if you want that then keep reading too :). This bread is moist, flavorful, and addictive! I wanted to eat the entire loaf in one sitting. If you've never made pumpkin bread, this is a great time of year to give it a whirl.

The idea is that all of the members are assigned a blog (secretly of course!)

and each member can peruse their assigned blog to find something that they

would like to make, or several things to make in the future. The assigned blogs

are kept completely secret until the reveal day and time, then you get to see

who had your blog, and you get to post about what you made from your assigned

blog. It's a lot of fun, and a great way to discover new blogs and

recipes.

One of the recipes I made was obviously the One Bowl Pumpkin Apple Cider Bread. I mixed that up a little and made it with pumpkin beer. I'm sure it would be delicious with Apple Cider but a few days before I was assigned to her blog I was drinking some of the Trader Joe's seasonal pumpkin beer and thought to myself "self, this would be delicious in a pumpkin bread!". Then, I saw the recipe on her site for the pumpkin bread, and let me tell you...that was a great decision.

I know you're sitting there thinking, I wonder what else I made? I was also completely enamored with the Herbed Baked Eggs. I have come to appreciate and enjoy Eggs Benedict (usually with seafood but I have had completely vegetarian versions too), and this reminded me of that. So I had to make them. They were delicious! The herbs make all the difference in the baked eggs. Fresh herbs make such a vibrant addition to almost any recipe. I followed the recipe as written so click the link earlier in this paragraph to get the recipe.

I also made the Spicy Noodles with Cilantro and Tofu exactly as the actual recipe was written. They were delicious too! (Would you have guessed any different??) I don't have a picture of them :(. It was a busy night but I would definitely make them again and again!

Back to the main recipe that I switched up a little:

One Bowl Pumpkin Beer (Cider) Bread

Makes 1 loaf

Directions:

1. Preheat the oven to 350F. Grease an 8½-by 4½-inch loaf pan with butter or nonstick cooking spray. .

2. In a saucepan boil the pumpkin beer until it is reduced to about ¼ cup and let it cool. In a bowl whisk together well the pumpkin purée, eggs, canola oil, brown sugar, zest, and reduced cider.

3. Sift together the flour, baking powder, salt, cinnamon, and cloves into the bowl with the pumpkin mixture. Stir the batter until it is just combined then pour the batter to the prepared loaf pan and bake for 45-60 minutes, or until a tester comes out clean. (Note: Check the bread at about 35 minutes and cover with foil for the remainder of baking time if the surface has begun to brown.) Let the bread cool in the pan before serving.
