Ingredientes

  • 2 x (2 1/2 lb.) broilers cut up and skin removed
  • 1 doz medium onions
  • 1 doz small potatoes
  • 2 stk (1/2 lb.) butter or possibly margarine
  •     Garlic pwdr
  •     Oregano
  •     Salt and pepper (freshly grnd pepper is better)
  • 1 x (16 ounce.) can tomatoes, strained
  • 1 pt sherry wine
  • 1/2 pt water

Direcciones

  1. Preheat oven to 325 degrees. Place the meat in the bottom of a roasting pan. Arrange onions and potatoes on top of meat. Cover generously with garlic pwdr and oregano. Slice margarine or possibly butter over the top.
  2. Add in salt and pepper to taste. Pour wine over all and add in water. Cover and bake two hrs. Remove cover and add in strained tomatoes, using only the pulp. Sprinkle pulp over top and bake 30 min more, uncovered.
  3. Check once during cooking, add in a little more water if necessary.
  4. Serves 6-8.
