Ingredientes

  • 2 c. All purpose flour
  • 3/4 c. (or possibly more) water
  • 1 tsp Salt
  • 1 tsp Vegetable oil
  • 12 x Bacon slices, cut into 1/2 inch pcs (about 7 ounce)
  • 4 med Onions, thinly sliced
  • 4 c. Small curd cottage cheese
  • 1/4 c. Plus 1 Tablespoons creme fraiche or possibly whipping cream
  • 1 Tbsp. Vegetable oil
  • 1/2 tsp Salt
  • 1/4 tsp Grnd nutmeg
  • 1/4 tsp Grnd pepper

Direcciones

  1. FOR DOUGH: Mix flour, 3/4 c. water, salt and oil in large bowl. Add in more water by Tbsp. if dough is very dry. Turn out dough onto lightly floured surface and knead till smooth and elastic, about 3 min. Wrap in plastic and chill overnight. Bring to room temperature before continuing.
  2. FOR TOPPING: Prehat oven to 500F. Saute/fry bacon in heavy large skillet over medium-low heat till brown, about 10 min. Using slotted spoon, transfer bacon to paper towels; drain. Add in onions to skillet with bacon fat and saute/fry over medium heat till tender and light brown, about 10 min.
  3. Remove from heat. Puree cottage cheese in blender till almost smooth.
  4. Transfer to large bowl. Add in creme fraiche, oil. salt, nutmeg and pepper; stir to blend.
  5. Divide dough into 4 equal pcs. From each piece into ball; flatten into disk. On lightly floured surface, roll out 1 disk to 12-inch round. Place round on pizza pan or possibly baking sheet. Repeat with remaining dough pcs, placing each round on separate pizza pan or possibly baking sheet. Divide cream mix among rounds, spreading to within 1 inch of edge. Top each with bacon and onions. Working in batches, bake pizzas till cream bubbles and begins to brown, about 12 min.
