Receta Onion and Cheese Appetizers
I have a confession: I find these canapes (or whatever name you prefer) addictive and I am not that much of an onion fan. Seriously, I find it very difficult to stop eating them once I start…kind of like the potato chip commercial that proclaims “you can’t just eat one”.
My mom made something very similar when she hosted one of her women’s groups and they were always popular. However, I have not been able to locate her recipe. So, I just came with my own version…it does taste very similar to what I remember of her appetizers.
Recipe: Onion and Cheese Appetizer
Ingredients:
- 2 med. sweet onions or yellow onions
- pinch of confectioner’s sugar, if using yellow onions
- 1 – 2 Tbsp. butter or olive oil
- 1/2 c. mayonnaise
- 1/4 c. shredded Swiss or similar cheese
- 1/4 c. grated Parmesan cheese
- fresh parsley, chopped
- Baguette, sliced into rounds
Instructions:
Slice onions from stem to roots, radial slices.
Melt butter or heat oil in a large skillet over med. or med.-low heat.
Add onions to skillet and sugar if using yellow onions or you just want a sweeter onion.
Stir occasionally until onions are very tender.
Remove onions from skillet to a med. bowl.
Meanwhile, heat oven to 375 degrees F.
Mix mayonnaise, cheese and parsley with onions.
Spread desired amount of onion mixture on top of baguette slices.
Place topped baguette slices on a lined baking sheet.
Bake until cheese is melted, lightly browned and bubbly, about 10 – 15 minutes. Note: Time does vary based on amount of mixture used and size of baguette slices. Check oven after 5 minutes or so.
Serve warm.
